When your Chef mentor Kevin Mitchell reaches out about doing an Historical Dinner honoring African American Caters that have contributed to Charleston, SC great cuisine and helped shape the hospitality industry.

Being trusted to test recipes dated back to the 1800's and to ensure that they are delicious was the task at hand.

After sitting and researching the work that I was asked to do, I learned that Eliza Seymour Lee was the daughter of Sally Seymour who was a well known and trusted Pastry Chef and Black Entrepreneur of her time. She aslo helped influence culinary styles and trends throughout Charleston, SC with her work and through the work of many other chefs that she trained.

Eliza Seymour Lee was one of the chefs that trained under her very own mother and went on to become one of the most esteemed cooks in early Charleston who ran not only a prestigious catering business but, with her husband, owned and operated five restaurant/ hotels throughout the city. Lee’s mother Sally Seymour, a former slave manumitted by her enslaver in 1975 passed down numerous traditional recipes such a one well known Plum Pudding recipe. It was to my surprise to find out that during this time frame raisins were actually referred too as plums 🤯.

The icing on this cake was ice cream..lol nah it was asking my wife Shanette Coad to assist me in making sure that this plate was going to have all that it needed to come to life and that she did. After the long nights of reading and chit chats with Chef Mitchell this is what we came up with and it was everything I could have dreamed of seeing on a plate.

This was such an honor and big thanks to my wife for always being right by my side through out our culinary tours, but big thanks to Chefs Kevin Mitchell and Rhonda Mitchell trust us enough to keep us around.

Served with Vanilla Bean IceCream topped with an Anson Mills Benne Seed Brittle and complmented by a Cherry Coulis and a Plum Pudding Porter Caramel Sauce with special thanks to Holy City Brewing for the Beer used in the sauce. **
