THE CHEF!

This Chef, .roy was the one who gave me my first opportunity to work in a kitchen. I learned many valuable lessons during my time as a mentee under Chef Dejuan. He taught me how to anticipate, adjust, and recalibrate the staff who were eager to stray from the brigade’s goals. Chef also instructed me on mental preparedness, hygiene essentials, and self-accountability within the hospitality industry. He showed me how a black chef is to carry themselves with poise and dignity.

One particular memory that stands out is when, shortly after my stage at one of Chef Thomas Keller’s restaurants, I was offered a job opportunity to work for him. Chef Dejuan and I had discussed the ‘greats’ before, with Chef Thomas Keller being one of them. I found myself needing to submit my resignation from my current position in order to go and work for him. In the culinary world, you don’t simply give a two-week notice and leave. The standard practice is to stay until you’ve trained your replacement and/or put in your time. I recall the day I nervously informed Chef Dejuan about the opportunity. He let out a deep sigh, looked away, looked back towards the kitchen, and finally back at me, staring me in the eyes and saying, “You have to do it! Now, go and
kill ‘em, Sean!” Then he walked away. Chef could have easily said, “Not yet,” and I would have stayed without hesitation. I wonder if I would have achieved the numerous accolades I have now if I hadn’t built upon the foundation you provided.

I appreciate you for encouraging my journey. This is a trait I feel I’ve inherited from you, as I aim to propel my cooks towards the goals of their own.

I am profoundly grateful for the unwavering support of my long-time supporters, the enduring love of my family and friends, and the incredible individuals with whom I have had the privilege to meet and connect with this past year.

Sharing the story of my family’s migration to the United States, along with my personal heartbreaks, triumphs, and culture through food, has been incredibly gratifying for me. It’s these moments that serve as an affirmation that what I am a part of, is much larger than myself, and I must remain mindful of my place within society and my community.

Of my Trinbagonian heritage; this is a dish primarily comprised of bacalau (salted cod), scotch bonnet pepper, allium, and in this instance some heirloom toybox tomatoes which have been peeled and marinated in fresh thyme and maldon salt. All of which have been dressed with a "niiiiiiiiiiiiiiice" California olive oil as my mother would say. 🖤

I’ve gone through constant transitioning; philosophical phases and growth throughout my career as a Culinarian. All the while, utilizing the techniques I’ve learned along my journey as a vehicle to express myself and convey my thoughts in a more vivid fashion.

The expression of myself through the Culinary Arts, has consistently displayed an actual reflection of the season, temperature and climate of my life both in and out of the kitchen. It’s extremely candid, intimate, and unveiling altogether.

Mill Valley…

…has been a real life episode of the television series “Bay Area Backroads”.

‘Bay Area Backroads’ was a favorite show of mine while growing up in the bay. As I got older I would use the episodes from the show as my road trip guide for when visiting the many great destinations of Northern California.

My journey; this road trip had landed me at The Gravity Tavern in the heart of picturesque Mill Valley. Mill Valley was exactly as I had seen from the many reruns of the show. From day one I was embraced by the community; knowingly, I would use my vocation as my way to show my gratitude in return.

I’m saddened to say that today marks my final day at The Gravity Tavern, and even though I’m moving on I would love for you all to continue to support the Truppelli family as I’ve witnessed them continuously support, embrace and give back to the tight knit community of the beautiful Mill Valley.

I thank you all for your continued love and support 🙏🏾
