Had the energy to try a new recipe... Salt-Free Autumn Squash Soup without salt. Did not use the oven to roast the squash.

It can be entirely vegetarian if soft tofu is used instead of greek yogurt.

My Sweetie and I were long-haul truck drivers (East coast to West coast and back again) and live aboard RVers for years. The ENEMY is moisture!

With fresh sweet corn now in season, it is time to partake and enjoy!

However; it seems such a waste to boil a large pot of water for just three individuals! This works great for 1 to 4 ears depending on the size and power of your microwave. Plus, there is all the mess from shucking and removing the silks.

Cut the first two rows of kernels off the ear where it was attached to the stalk; don't worry about the aforementioned shucking etc.
Place the desired amount of ears in the microwave and 'zap' for 3 to 4 minutes.

Be very careful when removing the ear(s) as the corn will be both hot and steamy. Squeeze the silk end of the ear and the treasure will come out clean and ready for seasoning and eating.

An abundance of cucumbers made me think about Cucumber and Avocado Gazpacho... Used store-bought spicy guacamole instead of fresh avocado and eliminated the need for a few ingredients. Still vibrant with a touch of vinegar and greek yogurt.

Ukrainian Dill Potato Salad, only four ingredients:

Servings: 4

1 pound (16 ounces) Baby New or Waxy Potatoes; if unavailable, cut waxy potatoes cut into 1 inch
chunks
1 teaspoon Zested lemon can be a great substitute.
2 Tablespoons unrefined Sunflower Oil
1 large garlic clove, minced or micro planed
(1 clove more if you like raw garlic)
2 Tablespoons Dill W**d minced, dry can be
used as a substitute.
Salt to taste, I leave this ingredient out.
For optional texture add roasted unsalted sunflowers

Place potatoes in a pot, and add enough water to cover 2”. Cover tightly (not ajar) with a lid bring to a boil, reduce heat simmer with the lid ajar until potatoes pierce easily (12 - 15 minutes) with a knife; do not overcook.

Meanwhile in a small bowl combine Sunflower Oil, zested Lemon, minced Garlic, and minced Dill.

Drain potatoes return them to the pot without rinsing and fold in the sauce until potatoes are covered and garlic gives off its perfume. Transfer to a presentation plate and serve.
