Nam Tok Neua or Neu Nam Tok (Thai Waterfall Beef Salad)

This is a classic Thai/Lao dish that I had to recreate.

Started with marinated full blood wagyu bottom round steak grilled over Chunx and thinly sliced against the grain.

Tossed in a bowl with Mint, Cilantro, Scallions, Shallots, Thai Crushed Chili, Toasted Rice Powder and classic Thai sauce that consisted of Fish Sauce, Lime Juice, Palm Sugar and Thai Crushed Red Chili. This was plated and garnished with more Toasted Rice Powder and Fresh Chili Peppers

This dish was the perfect synergy and marriage of the classic Thai flavors of Salty, Sweet, Spicy and Sour!

There was some prep required because I made the toasted rice powder and crushed chili flakes but once everything is done and your Mise en Place is ready this can be thrown together in about 15-20 mins!

Marinade: Hot n Spicy, Fresh Lemongrass, Ginger, Garlic and Palm Sugar

African Curry Shrimp Bowl with Fried Sweet Plantains, Sautéed Carrots & Red Peppers, Jasmine Rice, Cilantro and Lime Wedges!

Marinated U15 Wild Caught Shrimp and veggies with an African Curry Jerk Sauce for about 2 hours. Sautéed in my until crispy and carmelized and basted with a Roasted Pineapple Habanero Glaze. Fried some sweet plantains in peanut oil until the edges were dark & crispy just how we like it. Served in a bowl with Jasmine Rice, Cilantro & Lime Wedges. Talk about a trip to flavor town!

This is my entry for this month's fish challenge.

Miso Glazed Salmon is a staple meal in my house hold and incredibly easy to make. Paired with any type of risotto and you have 5 star meal that would impress 🤌🏾
