Here's some interesting stats on cheese consumption. Even though the U.S. produces the most cheese in the world, it falls outside the top 10 in per-capita consumption at 34.1 pounds per year. That’s less than Austria, Sweden, Cyprus, Norway…even Israel. Let's eat more cheese!!! 🧀🧀🤪

Have you ever tried Petit Chablis or Sancerre Rouge? You might want to now!

Petit Chablis: mineral driven, nice acid and notes of white blossoms, citrus and green apple. This is an unoaked Chardonnay and drinks very different that most chards. Crisp & refreshing!

Sancerre Rouge: moderate acid, low tannins and lots of ripe red fruits and flower. This is a Pinot noir grape grown in the Sancerre region. Would be lovely chilled on a warm evening

Buffalo milk isn't just for mozzarella. This "Buonasorte" from Italian cheese makers is a real treat! Buffalo milk has higher fat but less cholesterol than cow milk. If you have a chance to try an artisanal buffalo milk cheese, go for it!

Kikelet, "Kesoi Szureletsu," Late Harvest, Tokaji, Hungary 2018 - 9. Sweet & acidic with bouquets of freesia and honey

Rare Wine Co. "Savannah Verdelho," Special Reserve, Madeira MV - 15. Ginger, chocolate and subtly sweet

Need a great white for the holidays? We polished off a Kistler Chardonnay, Les Noisetiers, 2021 recently and can recommend! If you like a chard that’s got some smokey oak, but not too much, bright apple and pear, and is rich and super smooth, you can’t go wrong with this guy. Really versatile too, will pair with so many different foods.

At an amazing food and wine pairing event last night I was introduced to an equally amazing German wine, Dr. Hermann Erdener Treppenchen, Riesling Auslese. It was perfectly paired with a matcha cheesecake by the skilled pallet of Tonya Pitts, sommelier at One Market restaurant, San Francisco. A better match couldn’t be found in heaven, this lady Is pure talent!

The Laird family have owned vineyards in Napa since 1970, and we're featuring one of their exquisite wines in our current tasting. Jillian's Blend was named after the Laird Family Estate founder's granddaughter, and is a harmonious blend of 65% Cabernet Sauvignon, 19% Syrah, 13% Merlot, 2% Malbec, and 1% Petit Verdot. The perfect pairing with this wine is probably a cosy seat in front of a fireplace, but we do the next best thing and pair it with a tangy, fruity cow's milk cheese, and a peppery dark chocolate.

If you like a little salt with your chocolate there's a good reason why! Salt helps neutralize the taste of bitterness and emphasizes sweeter flavors, even those inherent to the cacao itself. The best blue cheese in the world? We think so, and Rogue River Blue was named World Champion at the 2019/20 World Cheese Awards. Cave aged for 9 - 11 months, this cheese is hand-wrapped in grape leaves soaked in pear spirits. You'll taste pear brandy, vanilla, toffee, truffle, fig, and a pronounced “blue” flavor.
