Pretty excited about this one! Tuna Boudin Noir in the style of a banh mi with tuna skin cracklins! We set out this week to try to utilize some parts of the fish that typically end up in the trash. Respecting the food that we consume is an important part of our restaurant outlook. What a better way to do that, than to take a page out of the Cajunโs book (who rarely waste anything) and make boudin with the tuna bloodline and cracklins with the skin. OH YEA AND ITS DELICIOUS!
