AIR FRYER PORK KEBABS

PORK PAIRED WITH MANGOS AND RED PEPPERS CREATES A VIBRANT, FLAVORFUL MEAL THAT FEELS LIKE A MINI TROPICAL ESCAPE WITH EACH BITE.

INGREDIENTS
Kebabs
1 pork tenderloin (about 1 lb./450 g), trimmed (see cook's tips)
1 large ripe mango
1 large red bell pepper
Marinade
¼ cup (60 mL) orange juice
2 tbsp (30 mL) honey
2 tbsp (30 mL) vegetable oil
1 tbsp (15 mL) Rotisserie Seasoning
Salad
1 pkg (5 oz./142 g) baby arugula
1 ripe avocado, cut into cubes
¼ red onion, thinly sliced
½ cup (125 mL) canned black beans, drained and rinsed

DIRECTIONS
Cut the tenderloin into 16 pieces about 1¼" (3 cm) thick. Cut the mango and bell pepper into 16 pieces about 1" (2.5 cm) thick each.
Whisk the marinade ingredients together in a small bowl.
In a large bowl, add the pork, mango, bell pepper, and ¼ cup (60 mL) of the marinade; stir to coat.
Thread 2 pieces of the pork, 2 pieces of the mango, and 2 pieces of the bell pepper on each of the Deluxe Air Fryer Skewers.
Insert the assembled skewers in the Deluxe Air Fryer and cook on "ROTISSERIE" until the pork reaches 145°F (63°C), 10–12 minutes.
Meanwhile, combine the arugula, avocado, onion, and black beans in a large serving bowl. Toss with 2 tbsp (30 mL) of the marinade just before serving. Drizzle the kebabs with the remaining marinade.

Cook's Tips:
Silver skin is a tough membrane on the outside of the tenderloin. It doesn’t get tender when cooked, so it’s best to remove it. To remove the skin from the pork tenderloin, insert the knife blade underneath the skin, keeping the blade angled away from the meat as you cut along the entire length of the skin. You can find precut mango in most supermarkets. You can also buy frozen mango chunks and defrost them for this recipe.

AIR FRYER ZUCCHINI FRIES

FRIES THAT TASTE TOO GOOD TO BE TRUE—THEY’RE LOW-CARB, GRAIN-FREE, AND GLUTEN-FREE. AIR FRYING CREATES A GREAT FRIED TASTE WITH JUST A SPRITZ OF OIL.

INGREDIENTS
Zucchini Fries
2 small zucchinis, trimmed and cut in half
1 tbsp (15mL) seasoning of your choice (see cook's tips)
½ cup (250 mL) almond flour
½ cup (250 mL) tapioca starch (see cook's tips)
Oil for spritzing
Simple Aioli
⅓ cup (75 mL) mayonnaise
1 small garlic clove, pressed
¼ tsp (1 mL) smoked paprika
⅛ tsp (0.5 mL) salt

DIRECTIONS
Cut the zucchini using the fry cut setting on the No. 8 thickness of the Rapid-Prep Mandoline. Toss the zucchini with the seasoning in a medium bowl and let stand for 5 minutes (see cook’s tips). Drain the liquid from the zucchini.
Combine the almond flour and tapioca starch in a shallow bowl. Working in batches, toss the zucchini in the flour mixture (your hands will work best for this part!). Shake off the excess flour from the zucchini.
Spritz the Deluxe Air Fryer trays with oil, transfer the zucchini to the trays, and spritz the zucchini liberally with oil. Place the trays on the top and bottom racks. Cook on "AIR FRY" for 15 minutes, rotating the trays halfway through.
Meanwhile, combine the aioli ingredients in a small bowl. Serve the zucchini fries with the aioli.

BEEF STROGANOFF & GREEN BEAN CASSEROLE

THIS ONE-POT MEAL PUTS CLASSIC FLAVORS IN A MODERN PAIRING.

INGREDIENTS
8 oz (250 g) white mushrooms, sliced
2 garlic cloves, pressed
2 tbsp (30 mL) flour
½ tsp (2 mL) salt
8 oz (250 g) 90% lean ground beef
6 oz (175 g) fresh green beans, trimmed and cut into bite-sized pieces
1½ tsp (7 mL) All-Purpose Dill Mix, divided
4 oz (125 g) egg noodles (about 2 cups/500 mL)
1¾ cups (425 mL) low-sodium beef broth
½ cup (125 mL) French fried onions
¼ cup (50 mL) panko bread crumbs
½ cup (125 mL) sour cream

DIRECTIONS
Add the mushrooms, garlic, flour, and salt to the Rockcrok® Everyday Pan or Deep Covered Baker and stir to combine.
Add the beef and mix well. Microwave, covered, covered, until the beef is no longer pink, about 7-9 minutes, breaking into crumbles halfway through.
When the beef is done, add 1 tsp (5 mL) of the All-Purpose Dill Mix, green beans, noodles, and broth. Microwave, covered, until the noodles are cooked, about 8-10 minutes.
Meanwhile, combine the remaining All-Purpose Dill Mix, fried onions, and panko in the Manual Food Processor and process until combined.
Add the sour cream to the pan and stir to combine. Let it stand for 3–5 minutes, then top with the onion mixture.

EASY WEEKNIGHT CHILI

COCOA ADDS AN EXTRA LEVEL OF FLAVOR TO THIS QUICK, HEARTY CHILI.

INGREDIENTS
½ tbsp (7 mL) canola oil
1 medium onion, chopped
1½ lbs. (700 g) 90% lean ground beef
3 garlic cloves, pressed
3 tbsp (45 mL) chili powder
1½ tbsp (22 mL) unsweetened cocoa powder
2½ tsp (12 mL) cumin
¾ tsp (4 mL) Seasoning Salt
½ can (3 oz./90 g) tomato paste
1½ cups (375 mL) low-sodium beef broth
1½ cans (16 oz. or 398 mL each) fire roasted tomatoes, undrained (about 2½ cups/625 mL total)
1½ cans (16 oz. or 398 mL each) mild chili beans in sauce, undrained (about 2½ cups/625 mL total)
Optional: Sliced green onion, sour cream, shredded cheddar cheese, jalapeño slices

DIRECTIONS
Heat the oil in the Rockrok® Dutch Oven over medium heat until shimmering, about 3–5 minutes.
Add the onion to the Dutch Oven. Cook and stir, uncovered, until the onions are slightly softened, about 2–3 minutes.
Add the ground beef and garlic. Cook over high heat for 8–10 minutes, breaking the beef into crumbles. When the beef is no longer pink, drain (if necessary).
Stir in the remaining ingredients. Cover and bring to a boil over high heat. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Serve topped with sour cream, green onion, sour cream, shredded cheddar cheese, or jalapeño slices, if you like.

Yield:
7 servings of 1½ cups (375 mL)

CHICKEN FAJITA BITES

PACK THE GREAT FLAVORS OF FAJITAS INTO TWO PERFECT BITES!

INGREDIENTS
4 medium bell peppers, any color
3 green onions
1/2 cup (125 mL) fresh cilantro leaves
4 oz (125 g) part-skim mozzarella cheese
2 cups (500 mL) finely diced cooked chicken breast
1/3 cup (75 mL) fat-free mayonnaise
2 tbsp (30 mL) Chili Lime Rub
1/2 cup (125 mL) fat-free sour cream

DIRECTIONS
Preheat oven to 400°F (200°C). Cut off tops of peppers and scoop out seeds. Wedge the peppers and arrange them on the Pizza Stone.
Finely chop the green onions and cilantro and grate the cheese.
Mix half of the onion mixture, half of the cheese, chicken, mayonnaise, and rub in a medium-sized bowl.
Blot excess moisture from peppers with paper towels, if necessary. Using a heaping Small Scoop scoop filling onto pepper wedges.
Sprinkle peppers with remaining cheese. Bake 5–7 minutes or until cheese is melted.
Mix sour cream into remaining onion mixture in processor bowl. Spoon it into a resealable plastic bag and trim the corner.
Remove stone from oven. Squeeze sour cream mixture over fajita bites.

Yield:
24 appetizers
24 servings of 1 appetizer

BREAKFAST TACO ROLL-UPS

THESE TACO ROLL-UPS MAKE AN EASY GRAB-AND-GO BREAKFAST

INGREDIENTS
3 eggs
1 tsp (5 mL) Southwestern Seasoning Mix
3 oz (90 g) reduced-fat sharp cheddar cheese (⅔ cup/150 mL grated)
1 link (3 oz/90 g) fully cooked jalapeño chicken sausage
2 tbsp (30 mL) canned diced green chilies
¼ cup (50 mL) reduced-sodium black beans, drained and rinsed
Oil for spraying pan and tortillas
14 fajita-sized (6"–8"/16–20 cm) flour tortillas
Optional Toppings
Chopped cilantro, fresh lime, shredded cheese, sour cream, salsa, or guacamole

DIRECTIONS
Preheat the oven to 400°F (200°C). Spray the Stone Bar Pan with oil using the Kitchen Spritzer.
Crack the eggs into the Ceramic Egg Cooker. Add the seasoning mix. Cover and shake to combine. Microwave, covered, on HIGH for 1 minute and 10 seconds and stir. If the eggs are still runny, continue to microwave for 20-second intervals, stirring after each interval, until the eggs are cooked through.
Grate the cheese with the Adjustable Coarse Grater over the Classic Batter Bowl.
Cut the chicken sausage into three pieces. Place the sausage pieces in the Manual Food Processor and process until finely chopped. Add the remaining filling ingredients and cooked eggs and process until finely chopped. Carefully remove the blade and transfer the mixture to the batter bowl. Add the mix-ins.
Wrap the tortillas in a damp paper towel and microwave for 30 seconds, or until warmed.
To create the roll-ups, arrange the tortillas on a large cutting board or a Pastry Mat. Use the Small Scoop to place two scoops of filling along the bottom of the tortilla. Tightly roll the tortilla around the filling. Repeat with remaining tortillas and filling.
Place the roll-ups, seam-side down, on the pan and spray the tops with oil. Bake for 8–10 minutes, or until the edges are light golden brown. Serve with optional toppings.

THIS CREAMY FLAVOR-PACKED PASTA IS MADE IN ONE SKILLET WITH NO DRAINING REQUIRED!

INGREDIENTS
1½ cups (375 mL) unsalted chicken stock or broth
8 oz. (250 g) fettuccini noodles
½ cup (125 mL) half & half
2 tbsp (30 mL) Garlic Parmesan Seasoning
½ cup (125 mL) frozen peas
1 tbsp (15 mL) butter
Optional: Grated Parmesan cheese and parsley
DIRECTIONS
Combine the broth, fettuccine, half & half, and seasoning in a 12" (30-cm) skillet.
Cover and bring to a boil over medium heat. Lower the heat to low and simmer, covered, until the pasta is tender, 12–14 minutes, stirring every few minutes to break up the noodles.
Stir in the peas and butter. If you’d like, top with Parmesan and parsley.

THESE SPICY-SWEET STICKY GRILLED WINGS WILL BE YOUR NEW GAME DAY FAVORITE SNACK!

INGREDIENTS
2 dozen chicken wingettes or drummettes (about 3-4 lbs/1.4-1.8 kg))
2 tbsp (30 mL) canola oil
1/2 tsp (2 mL) each salt and black pepper
1/4 cup (50 mL) Asian-style hot sauce such as Sriracha
6 tbsp (90 mL) honey
2 tsp (10 mL) lime juice
6 tbsp (90 mL) butter, melted
2 tbsp (30 mL) chopped fresh cilantro

DIRECTIONS
Preheat oven to 425°F (220°C). Combine wings, oil, salt and pepper in a large mixing bowl and toss until evenly coated. Transfer wings to Large Sheet Pan and bake 28-30 minutes or until golden brown.
Meanwhile, in separate mixing bowl, combine hot sauce, honey, lime juice and butter and whisk until blended.
Carefully remove pan from oven. Heat Grill Pan over medium heat, about 5 minutes. Toss wings in half of sauce until evenly coated. Grill wings 2-3 minutes or until wings form grill marks; turn over. Add remaining sauce and continue grilling 2-3 minutes or until wings are caramelized and sauce is thickened.
Remove pan from heat. Sprinkle with cilantro before serving.

BARBECUE PORK TENDERLOIN

OUR DEEP COVERED BAKER ALLOWS YOU TO PREPARE A PORK TENDERLOIN IN THE MICROWAVE, WHICH GIVES YOU A HEAD START ON SPEEDY SANDWICHES OR SALAD.

INGREDIENTS
1 pork tenderloin (about 1 pound)
1 tablespoon vegetable oil
2 tablespoons Smoky Barbecue Rub
Ingredients for Miniature Barbecue Pork Sandwiches or Barbecue Pork Salad

DIRECTIONS
On Large Grooved Cutting Board, trim fat and silver skin from pork tenderloin using Boning Knife. Brush with oil using Chef's Silicone Basting Brush. Place pork into Deep Covered Baker, tucking narrower end under to create a uniform thickness. Evenly rub pork with barbecue rub.

Cover baker; microwave on HIGH 6-10 minutes or until Digital Pocket Thermometer registers 150°F, checking temperature at 6 minutes and then at every 2-minute interval. Remove baker from microwave; let stand, covered, 10 minutes (temperature will rise to 160°F for medium doneness). Prepare sandwiches or salad, if desired.

ROASTED CARROTS WITH PISTACHIOS

THIS COLORFUL MIX OF TASTY CARROTS, FRESH MINT, AND DELICIOUS PISTACHIOS CAN BRING SOPHISTICATION AND REMARKABLE FLAVORS TO YOUR NEXT FAMILY MEAL.

INGREDIENTS
2 small bunches carrots, any color, with their tops (about 1½ lbs./700 g)
3 tbsp (45 mL) olive oil, divided
½ tsp (2 mL) cumin
½ tsp (2 mL) salt, divided
½ cup (125 mL) chickpeas, drained and rinsed
2 tbsp (30 mL) red wine vinegar
1 tbsp (15 mL) honey
⅓ cup (75 mL) shelled pistachios
¼ cup (60 mL) loosely packed fresh mint, plus more for serving

DIRECTIONS
Place the Stone Bar Pan in the oven and preheat to 425°F (220°C).
Remove the tops from the carrots, saving some for serving, and scrub them clean. Cut at an angle into 2–3" (5–7.5-cm) pieces. For thicker carrots, cut in half lengthwise.
Toss the carrots with 1 tbsp (15 mL) of the oil, cumin, and ¼ tsp (1 mL) of the salt in a large bowl. Carefully remove the pan from the oven and add the carrots in a single layer.
Bake for 10 minutes; add the chickpeas to the pan and stir. Bake until the carrots are browned and tender when pierced with a fork, 8–10 more minutes.
Whisk the vinegar, honey, remaining oil, and remaining salt in a small bowl to make a vinaigrette. Process the pistachios, mint, and 3 tbsp (45 mL) of the vinaigrette in the Manual Food Processor until the pistachios and mint are coarsely chopped.
When the carrots are cooked, remove the pan from the oven and immediately pour on the remaining vinaigrette, stirring to coat.
To serve, place the carrots on a platter and top with the pistachio mixture, extra mint, and carrot tops, if you’d like.

PIZZA GRILLED CHEESE

IT’S GRILLED CHEESE. IT’S PIZZA FLAVORS. IT’S A MATCH MADE IN HEAVEN.

INGREDIENTS
¼ cup (60 mL) butter, softened (½ stick)
3 garlic cloves, pressed
8 slices Italian bread
1 oz. (30 g) Parmesan cheese, finely grated (½ cup/125 mL)
1 lb. (450 g) chicken tenders
1 ½ tbsp (22 mL) Everything but the Pizza Seasoning
1 tsp (5 mL) vegetable oil
8 slices low-moisture, part-skim mozzarella cheese
Optional: Ranch dressing or marinara for serving

DIRECTIONS
Set the Deluxe Electric Grill & Griddle with the griddle plates to "GRIDDLE".
Combine the butter and garlic in small bowl. Spread one side of each slice of bread with the butter mixture, then sprinkle the Parmesan over the buttered bread slices.
Season the chicken with the seasoning and oil in a medium bowl. Add the chicken to the grill and cook, closed, until the internal temperature reaches 165°F (74°C), 3–4 minutes.
Remove the chicken and cut it into thirds. Carefully wipe the griddle with a paper towel (see cook’s tips).
Place 4 slices of bread, butter-side down on the grill. Add the chicken and 2 slices mozzarella cheese. Top with the remaining bread, butter-side up.
Close the grill and adjust the lid so it touches the top of the bread. Cook the sandwich until the bread is golden brown and the cheese is melted.
Cut each sandwich into thirds and dip them in ranch dressing or marinara, if you’d like.

While the grill is open, hold a piece of damp paper towel with your tongs, and then wipe the griddle.

FOR SUNDAY-DINNER VIBES IN LESS THAN 30 MINUTES, THIS RICH, BROTHY MEAL STARTS ON THE STOVETOP AND FINISHES COOKING IN THE MICROWAVE.

INGREDIENTS
1 tbsp (15 mL), plus 1 tsp (5 mL) vegetable oil, divided
4 boneless, skinless chicken breasts (8 oz./250 g each)
1 tsp (5 mL) smoked paprika
½ tsp plus ¼tsp (3mL) salt, divided
1 shallot
2 garlic cloves, peeled
½ cup (125 mL) chicken broth
8 oz. (250 g) reduced–fat cream cheese (Neufchâtel), softened
8 oz. (250 g) asparagus, trimmed and cut into 1" (2.5-cm) pieces
½ lemon, sliced
Optional: Rice for serving

DIRECTIONS
Heat 1 tbsp (15 mL) of the oil in the Rockcrok® Everyday Pan over medium heat for 5 minutes.

Season the chicken with the paprika and ½ tsp (2 mL) of the salt.
Cook the chicken until lightly browned, 2–3 minutes per side; set aside (the chicken will not be fully cooked).

Meanwhile, finely chop the shallot and garlic in the Manual Food Processor. Add the shallot, garlic, and remaining oil to the pan and cook until the shallot and garlic are translucent, 1–2 minutes.

Add the broth, cream cheese, and remaining salt. Cook for 2 minutes, stirring continuously to melt the cheese; remove from the heat.

Nestle the chicken into the sauce. Top with the asparagus and lemon slices.

Microwave, covered, until the chicken reaches 165°F (74°C), 8–10 minutes. Stir the sauce to combine the mixture before serving. Serve over rice, if you’d like.

SUPER VEGGIE MARINARA SAUCE

THIS QUICK AND FLAVORFUL SAUCE WITH HIDDEN VEGETABLES IS GREAT OVER PASTA OR AS A DIPPING SAUCE.

INGREDIENTS
2 tbsp (30 mL) olive oil
3 garlic cloves, pressed
1 can (28 oz./794 g) crushed tomatoes
1 tsp (5 mL) dried basil
¼ tsp (1 mL) salt
6–8 scoops Enrichables™ Super Veggie

DIRECTIONS
Heat the oil in a medium saucepan over medium heat for 1–3 minutes. Add the garlic and cook for 15–30 seconds, stirring frequently until it’s fragrant.
Add the tomatoes, basil, and salt. Bring to a simmer; cook for 15–20 minutes.
Remove from heat and stir in the Enrichables™.
