Things wot I did this weekend 🤣
Answered a Facebook post asking for a pit boss for the weekend and ended up at Millington Hall Farm in Altrincham tending a massive BBQ mates reverse flow offset for 3 days and it was absolutely fantastic! I was properly in my element and the customers were so lovely and engaging too, it really made it a great few days.
I’ve helped host 6 sessions on a farm to fork Wild Grill experience, here are a few of the things we cooked:
Soy braise pork belly, curry goat, smoked brined turkey crowns and half crowns. Med rare silverside, pulled pork shank, ribs, wings. Pork belly with crackling. PBEs. Beef shin. Venison skewers, pork skewers and massive pork chops with crackling. Pigeon. Whole goat shoulders. Goat birria, beef birria, lamb birria, scotch eggs, whole lamb and goat legs, butterflied lamb and goat legs, lamb and goat neck, chops, belly, picanha, sirloin steaks, venison loin, tenderloin. Roast pork shoulder and legs joints, pulled pork. Jerk wings, jerk pork.
And a pigs head. Just because I could.

You absolutely wonderful bunch! Today was just fantastic, like a proper homecoming and I even got to door people (IYKYK 🤣)
I got to feed my favourite food to wonderful people, and listen to a bloody brilliant band too.
The feedback I had today was so lovely and it makes it all worthwhile. These popups aren’t just a few hours service. They are at least 2 days of stock planning, ordering, collection, prep and smoking, a day of service, and 2 days of clean up on top of a day job.

Last weekend we catered evening food for a wedding in the most beautiful location in Brewood, Staffordshire - it makes such a change not working on a trading estate!! Look at that sunset 🥰 🌅
180 portions of pulled pork/pulled beef/halloumi and loaded fries done, all the kit cleaned down and packed away and now we have a WEEKEND OFF 😱
