-another recipe for the cookbook I am working on.
*cook book vibe* simple but impressive dishes for a date night in or entertaining for a dinner party.

Pictured- a beautifully crispy chicken cordon bleu with garlic Dijon cream sauce. roasted potatoes and garlic roasted French beans 🥰

Recipe alert 📣
It has been nice weather for 2 days and I’m already trying to bring out the salads 😂. This orzo pasta salad with homemade lemon vinaigrette is a PERFECT addition to a grilled dinner or any spring/summer dish.

Bring water to a boil with 2 tsp chicken bouillon. Add in the orzo until it starts boiling again and reduce to medium and cover. When the water is boiled out of the pot it is done. (6ish minutes)

Cut the veggies and add the orzo!

Combine the dressing ingredients in a blender except the oil. slowly pour in the olive oil to combine (reel in previous post for reference).

Put in fridge too cool!
Add Parmesan or some feta. I added Parmesan! 🤪

Ingredients
*a cup of orzo
*2 1/4 cups of water
*chicken bouillon
*2 baby cukes
*cherry tomatoes
*parsley
*one red onion

Dressing
*2 garlic cloves
*1/4 cup of apple cider vinegar
*one lemon juiced
*1tbs Dijon mustard
*1tbs of honey
*1/4 cup of olive oil
*salt and pepper to taste

Cacio e Pepe NEEDS and DESERVES shrimp! Very simple pasta dish with a lot of flavor and quick to prepare. I attempted to make a video but it just wasn’t in the cards yesterday 😅

-12 oz bucatini pasta. (Read your labels. There should not be 284738 ingredients in your pasta).
-a cup of pecorino Romano. I used parmigiano reggiano because I grabbed the wrong one from rushing 😅
-cup of reserved pasta water
-2 tbs of fresh cracked pepper. More if you’re like me and love the pepper taste. Trust me, you want to use fresh cracked.
-lemon
-shrimp if using

*Bring a pot of salted water to a boil and add the bucatini.
*when pasta is done cooking, take out a cup of the water and drain the rest of the pasta.
*add a tablespoon of olive oil to the pan and add pasta.
*if you’re using shrimp, add the shrimp that you cooked to the pasta. (Please don’t make me sad and use fully cooked shrimp from the frozen aisle of the grocery store. ☹️)
*add the pepper
*add the cheese and water little by little until it makes a creamy sauce.
*plate and add more pepper and cheese if you’re like me 😂
*squeeze a little bit lemon on top to make this dish POP!
