I tried a ton of sandwich bread recipes. Some with all purpose flour, some with wheat flour, others with bread flour. Recipes with milk instead of water. This recipe I found is by far the best recipe I have found for sandwich bread so far!

2 cups of warm water 110-115 Fahrenheit
1 tablespoon of yeast
1/4 cup of honey
2 tsp of salt
2 tablespoons of olive oil
4 1/2 cups of flour
Chef tips******
-I used King Arthur all purpose flour. I found that a good quality flour makes a better bread.
-Yeast dies at 120 degrees Fahrenheit so you want your water to be less than that. Mine was 113 degrees.
-You will see the yeast bubble and “bloom” if this does not happen then your yeast is dead and your bread will not rise. Start over with fresh yeast. Happens to the best of us 😔
-The honey feeds the yeast! I mixed the honey with the water before adding to the yeast.
-I used olive oil instead of avocado. I always buy the olive oil that has a light taste.
-used 4 1/2 cups of flour and an extra 1/4 when rolling into a log because it was a little sticky. *sprinkle a little flour at a time until it’s workable
-***** To have a professional looking loaf, pinch the seams of the bread after rolling it in a log. The seam of the bread should go on the bottom of the pan and the pretty side on the top.
-If your kitchen is very cold put the dough somewhere a little warmer to proof the dough. *warm not scalding hot since yeast dies in heat*
-When done baking slide a butter knife around the bread pan(should not have stuck) and turn the bread pan upside down to take the bread out and have it cool on a wire rack
-Wait until the bread is completely cool before you cut into it or you will end up with not a great texture from all of the steam.
