Cozido a Portuguesa “Portuguese Boil” in other words meat boil because traditionally this dish involves even more meat than I used 🤯 A combo of pork, beef, chicken, sausages, cabbage, carrots, collards, potatoes, and rice. I added beans, so yeah every major food group is in this pot lol.
Die hard cozido lovers please don’t come for me because I added a kick of heat to mine and didn’t use pig ears, snout, etc! I don’t eat those parts but I can’t wait to dig into this humble, filling, and tasty dish.

I have the ultimate sweet tooth so anyone that knows me knows I tore through all of this in one sitting….and I loved! their food was tasty (my kids especially tore it up) but the star of the night for me was their desserts 🥰.
So elegant, bursting with different flavors and textures, and super affordable! I’m typically the chocolate lover, nothing ever hits like chocolate but last night my ultimate favorite was the tropical ube cake❤️ Almond Ube Cake, Mango Gelee, Coconut Mascarpone Cream-delish delish delish 👏🏾👏🏾👏🏾👏🏾.

It’s just simple and comforting Bacalhau Com Natas (codfish cream bake).
Actually no, not so simple…let me break it down.
I moved to Michigan 6.5 years ago from NJ. NJ has a very large Portuguese population and a much smaller but very significantly sized Angolan Population. A lot of these dishes I prepare appear to be simple and easy but take lots of planning and creativity because drum roll 🥁, we don’t have access to all the same ingredients here in Michigan. Let’s take my cod cream bake for example. For the most part, I make everything from scratch because we don’t have Portuguese supermarkets for me to buy the jar, buy the salted cod, buy Carolina rice for rice pudding , etc. I’ve learned to replicate as closely as possible over the past year and a half or so to provide the most authentic experience and taste 👅. Some times I get visitors who drive from NJ so I ask them to bring some ingredients (sausage, cod, marinades,etc), sometimes I have to purchase my ingredients online all the way from Massachusetts! Thank you . When I can’t order or don’t have visitors I try to replicate the flavor of the salted cod but there’s no comparison (sorry so much umami from it being dried in salt).
I don’t hike up the price despite my ingredients often costing way too much when I need them shipped.
Just creamed cod? Nope think again. This dish is made with lots of love, dedication, planning, creativity, and coins 💸. Remember that next time you take a bite, place an order, or just simply like a pic❤️

Peanut Chicken Stew -didn’t come out how I wanted it to but still delish!
Accompanied with cassava leaf stew, palm oil beans (also didn’t come out exactly how I like it this time), yuca, and coconut rice 🥥.

Arroz de Marisco (Seafood rice) is not paella but I consider it a distant cousin...very distant.
If you don’t know Portugal is heavy on the seafood, we’re right by the sea and fresh seafood is bountiful. Traditional arroz de Marisco is tomato based and more saucy than dry. I’ve seen and tasted many variations and depending on what region and who’s house, you may get a mix between the two.
I like mine in between dry and wet or saucy (not so much soupy) but I’ll eat any variation cause they are all delicious!

Food this month was awesome sauce! I reserved some of the liquid from marinade and cooked it to add extra piri piri sauce on top of the chicken for the win, thanks to my sous chef who throws down on the grill . I served churrasco/piri piri chicken with my vovo’s rice recipe and salad with homemade balsamic vinaigrette. I also made chicken curry with coconut rice & plantains and vegetable curry! Dessert was little orange & lemon cakes, keep swiping for my GF version🤩.

Portuguese grilled (churrasco) chicken...what’s so special about it?
It’s our go to “semi-fast food” in the Portuguese communities here in the US and in Portugal . We buy them at churrasqueiras (take out restaurants that make this type of chicken) and it’s typically sold with rice, French fries, and maybe salad.
Also our go to marinated chicken at cookouts.
Traditional churrasco chicken is whole, butterflied, and grilled over open flame on a rotating spit. Marinated with red pepper and, lemon, paprika , and lots of garlic.
Piri piri chicken has African influence, same process but adds piri piri sauce made from African birds eye chilis from Angola & Moçambique .
In July i featured my churrasco & Piri Piri style chicken and this month you get the option to try it again! Flavors will be even more intense this month and accompanied by rice & fries😋

Disclaimer: I do not own a rotating spit and since piri piri peppers are hard to find, they are often substituted for another similar variety.

So I ask...traditional or spicy???
