A little bit of the history of Sushi. About 1300 years ago, people fermented fresh fish with salt and rice to preserve it, that was the beginning of sushi. However, the rice was used as a fermentation ingredient, and only the fish was eaten. Sushi as we know it today, began some 400 years ago during what’s called the Edo era. At that time there were fancy sushi restaurants and sushi stands. It was prepared much larger then, unlike our current bite size portions. After World War II due to regulations, and the shortage of food, sushi restaurants closed. Later as Japan experienced economic regrowth and prosperity, policies changed and sushi service was once again allowed. The first sushi restaurant in the US was opened in San Francisco in 1887 by Japanese Immigrants. However, during World War II sushi restaurants were closed due to the internment of Japanese Americans. After the war the restaurants slowly reopened. And from 1970 on the boom of sushi restaurants began. Today dozens by dozen of sushi restaurants exist in major metropolitan cities.
