Blistered vine tomato ruote with spicy vodka red sauce 🍅🌶🍝🤌

I had SO much fun creating this dish and received a lot of q’s after sharing it. Feel free to read on as I attempt to answer them 🥰

Is that pasta? If so, what type?
Yes it is indeed pasta. The pasta shape is called ‘Ruote’ which is very similar to ‘Rotelle’, just a tad smaller and tighter. Rotelle comes from the Italian word “Wagon Wheels”.

What draws you to the pasta shape?
It’s a fab shape for capturing heavy sauces. Not to mention the visual aesthetic it offers!

Do you just add the blistered tomato‘s on top as decoration?
ABSOLUTELY NOT!!! I’m telling you now these adorable little tom’s are the biggest flavour bombs and the star of the dish. Take it from someone who leaves raw tomato on her plate or pulls it out of her fresh salad sandwich, roasting tomatoes brings about a sweetness and juiciness like no other. It’s totally addictive!

Where can I purchase Ruote pasta?
I grab it from Harris Farm, or smaller grocers often have it (thank you 🙏)

During the early stages of Sydney’s lockdown I put together a menu of seasonal sweet and savoury food items to bring comfort to my local community during this time.

The best way to share my love is through baking and cooking—something I adopted from my Mum and Nonna.

With this in mind, each menu item holds a special place in my heart. From Mum's after-school caramel slice to the Lasagne that pre-dated loud Christmas lunches; memories of comfort that I hope I can pass from my kitchen into others.
