BUBBIES POTATO LATKA’S
• 10 lbs russet potatoes (makes three dozen large latkes)
• 1+ cup canola oil
• Two large onions
• Eight eggs
• ¼ - ½ cup of matzo meal or flour
• Two teaspoons salt
• ¼ teaspoon black pepper
• seasoned salt after frying to taste.
Preparation
1. Wash and cut potatoes and peel and cut onions. My grandma peeled the potatoes, but I recently learned that is unnecessary. Please place them in a large bowl with lemon juice and water to keep them from oxidizing.
2. Then, the potatoes and onions can be hand-grated or use a Cuisinart and a shredding blade. Once grated, drain them in a colander, place them in a large clean bowl, and use a linen towel or cheesecloth to remove whatever moisture is left. Wringing out the extra moister from the potatoes and onions should be done in batches and placed in a large bowl.
3. Add all the ingredients (eggs, matzo meal, salt, and pepper) to the dried potatoes and onions bowl.
4. Heat oil in a large skillet. Ensure the oil is hot before placing latkes in it; this will make or break your latkes. Scoop and flatten the mixture using a slotted spatula. Place the patty in the oil. Add more oil when it gets dirty or dissipates while cooking.
5. The cooking time depends on the heat of the oil and skillet. Typically, cook until the bottom of the patty is brown and then flip. Do the same thing for the other side.
Transfer the cooked latkes to a paper towel. The paper towel eliminates excess oil. Then, lightly sprinkle the latkes with kosher or seasoned salt for extra flavor. Serve with sour cream or applesauce.
This Friday night, we are blessed with lighting both the Shabbat candles and the Chanukiah. With everything going on in Israel and the world, we pray that the shimmering light from all the candles comforts you and your family. May we pray together and wish for the release of the remaining hostages.

Sunday supper perfection: Chile Lime Chicken! We marinated chicken thighs and legs in a mixture of lime juice, olive oil, garlic, and chili powder, then grilled them to perfection.
The result was juicy and flavorful chicken with a nice tangy kick from the lime and a little bit of heat from the chili. Recipe anyone?

Recipe to follow on silverliningscooking.com 1. Kitchen towel to help ring out the water. The best advice given from my friend Risa’s mom. 2. Leave the skin on, no need to peel potatoes. 3. If using your cusinart add onions and potatoes together. 4. I shred and purée the potatoes, this gives it a nice texture. Crunchy on the outside and soft on the inside. ** lemon juice helps with potatoes oxidizing. A little goes a long way. Use while making mixture. 5. Gluten Free matza meal or matza ball mix already seasoned. I used both, more of the matza ball mixture because it has a finer texture. 6. Slotted spoon for putting mixture into hot oil. 7. Have patience and let one side to brown before flipping.
