Healthy Stuffed Zucchini Raviolis

Dinner is sure to please! It’s easy on your waistline, too! Start by sheeting the Zucchini
Cut each sheet in half and form a little “t”.
Fill with a mixture of Cottage Cheese, Egg, Seasoning, and fresh Garlic. I topped mine with a little Zakuson Marinated Tomato.
Fold the Zucchini noodles to form a little pocket.
Spread a thin layer of pasta sauce in a casserole dish and lay your Zucchini noodles face down.
Top the noodles with Parmigiana cheese.
Bake at 350 for roughly 30 minutes.

Easy Over Night Oats:

1 cup of Oatmeal
1 cup Almond Milk
1 cup of 0 fat Greek yogurt
1 scoop of protein powder
1 scoop of Chia seeds
1 scoop of Pepita seeds
Agva nectar (to desired taste)
Top with fresh Blueberries

refrigerate overnight, and enjoy the next morning! We made a batch of these for a private dinner party as a parting gift. The client and guests were thrilled!

Appetizers: Seared Ahi Tuna, and Argentine Shrimp Crostini, served with Homemade Focaccia Bread.

Entree: Whole Filet Mignon with Mushroom Red Wine Sauce.

Sides: Cheddar Mashed Potatoes and Balsamic Glazed Brussels.

Dessert: Dark Chocolate Truffles, Chocolate Dipped Strawberries, and an assortment of Cupcakes.

Planked Shank (Lamb) served over a bed of egg noodles, tossed in a olive oil-fresh herb sauce, and topped with a sunny egg!

Cauliflower Topped Pot Pie

2 cups cooked, chicken breast, cubed or shredded.

1 10.8-oz. package frozen baby peas. I also add in 8 oz. of fresh diced, sautéed mushrooms.

1 (10.75 ounce) can condensed cream of mushroom soup. You can use reduced fat- reduced sodium, if you’d like.

1 cup corn, I prefer fresh corn that I’ve grilled on the Green Egg. It’s a bit more time consuming but worth it! You can use frozen if you prefer.

1 cup diced celery.

½ cup chopped sweet onion.

3 tablespoons chopped fresh parsley, plus more for garnish. You can substitute dried parsley if you don’t have fresh.

2 teaspoons chopped fresh thyme or 3/4 tsp. dried.

1 teaspoon lemon zest.

¼ teaspoon ground pepper.

2 oz. of Mozzarella Cheese (for the Cauliflower topping)

One small head of cauliflower

2 tablespoons unsalted butter, melted.

The Cauliflower Crust is as follows-

3.5 oz fresh cauliflower pearls (not frozen).

1 oz. egg white.

2 oz. Mozzarella Cheese

Mix all together, spread on an oiled sheet pan. Flatten with hands and shape into the size of the bowl opening.
Heat oven to 400 degrees. Bake for 15 minutes, flip, bake for an additional 5 minutes. Transfer to bowl to shape.

Cauliflower Soup-

You’ll need Cauliflower, of course!
It gives the soup a silky texture without any nuts or dairy.

Garlic and shallots – You’ll want to roast them along with the cauliflower. Once they’re tender and caramelized, they add rich, nutty flavor to this cauliflower soup.

Fresh Thyme – For fresh, earthy flavor.
(If you don’t have fresh Thyme you can substitute dried).

White miso paste – It adds savory, umami flavor that tastes fantastic with the roasted cauliflower, shallots, and garlic.

Dijon mustard – For a delicious tang.

Extra-virgin olive oil – For richness.

Vegetable broth – I like to use a low sodium Vegetable broth.

Fresh lemon juice – It makes the soup nice and bright.

Sea salt and fresh black pepper – To make all the flavors pop!

Farm fresh and homemade! In-House Garlic Herb Focaccia bread with Rustic, Unfiltered Olive Oil. Fresh made “Hot Honey” with Adkins Cajun Seasoning. Elk steaks with White Cheddar Mash, Italian Eggplant from the garden, and a TexAtlantic BBQ sauce - made with smoked apples from Linn Grove, IA. Hard work in the kitchen, that seemed a lot more like fun, than work.
