Recipe:

5 bunches of parsley
5 cups of fresh diced tomatoes reserve the juice
8 cloves minced fresh garlic
1/4-1/2 cup extra virgin olive oil
Mix it all together ๐Ÿ‘๐Ÿผ๐Ÿ‘๐Ÿผ
Sea salt to taste
Make a day ahead so flavors can marinate. This will be a new staple in your fridge ๐Ÿ™‚

How do we cook one of the most wonderful pieces of meat? We learn from the best!
Slow roasted first! (Reverse searing) this will give you the Juiciest, delicious & most evenly cooked tenderloin you will ever have!

Quick recipe recap! ๐Ÿ‘‡๐Ÿ‘‡

๐Ÿ‚ 2-3 lb tenderloin center cut, trimmed
& tied in 1.5โ€ intervals
๐Ÿฝ Preheat oven to 300 degrees
๐Ÿง‚ Season with salt & loosely cover with plastic wrap and let sit for one hour at room temp!
๐Ÿ‘จ๐Ÿฝโ€๐ŸŒพPat it dry & season with pepper. Spread 2 teaspoons of softened butter evenly over the roast.
๐Ÿง‘๐Ÿผโ€๐Ÿณ Transfer to wire rack and roast for about 40-55 min for medium rare (120-225 degrees)
โœ”๏ธ Flip roast halfway through
๐Ÿ”ฅ heat 1 tablespoon of vegetable oil in skillet brown the roast well on all sides.
๐Ÿงˆ transfer to carving board and spread 2 tablespoons of Shallot parsley butter evenly over the roast (recipe will be in highlights)
๐Ÿ›‘ LET IT REST FOR 30 min ๐Ÿ›‘
๐Ÿ”ช slice into 1/2-inch-thick slices.
