My hands are a trouble.

For the past few months, my hands have been hurting. They felt better on time off, but not resolved - and right back to the ache and stiffness when I the knives got picked back up.

I am working with my doc, but have made the decision to suspend Cargo Bike Kitchen meal services and personal cheffing for the moment.

I am still available for consultations.

I frequently theme my menus by vegetable and end up with a lot of items with the same vegetable in a week. Some of this is seasonal - or seasonal training - when it's available, you use it! Some of it is that I just get little crushes on vegetables and find myself wanting to use them with abandon. Here's the menu for next week, featuring kale:

I'm picking up some Loki Fish Co. Keta salmon portions this weekend.

Keta has a lighter and more delicate taste than Sockeye or King, and may people prefer it. I'm thinking of salmon with Herbs de Provence and lemon zest for this week's menu.

It's still snowing in North Seattle as I write this, and the forecast says it will keep going through tomorrow night when it is expected to slowly changeover into a wintry mix and then rain sometime on Monday.

I do not know if the roads will be safe for me to get to the kitchen this week. My bike is great, but so are the hills between here and there. This menu is tentative.

We're at the end of Puget Sound fresh produce availability. We'll still be able to get some root veg and hardy winter veg that store well, but it will be a couple of months before the new crops arrive. With that in mind, I'm now purchasing items not locally grown.

What does a personal chef do?

Sometimes I'm a resource for people transitioning to a new diet and suggest recipes, ingredients, and techniques.

Sometimes I plan out and make everything a client eats - or, I make the plan and shopping list and hand it off.

Sometimes I make just a few meals a week, or maybe one v special meal.

Sometimes, I regularly make a week's worth of veggies for busy professionals who want their five-a-day (or more!) but don't have the time or space to prep.

I will wipe down the kitchen and oven and prepare the gluten free items first, but this is a shared gluten kitchen, and is not celiac safe.

"I wanted to eat vegetarian, limit dairy and gluten significantly, and lose weight- all while emphasizing local, organic, seasonal produce, nothing frozen. Cargo Bike Kitchens made it happen! They bring me three meals and 2-3 snacks a day, all labeled for day and meal. I don't have to think about it or exercise self-control at the grocers. And I feel full- lots of veggies, so much food despite keeping my overall calorie count for the day down. Scrumptious food and snacks all meeting my dietary goals- highly recommended!"

Nutrition in scary times: as we all settle in (gracefully or not) to staying healthy in a pandemic, we can help our bodies by eating a wide range of nutrients. I challenge myself to eat as many colors of fruits and vegetables a day as I can, but variety over time is my true goal.

There are 4 main color groups in vegetables:

Greens - chlorophylls. Chlorophylls are how plants turn sunlight into sugar. For humans, green eats (and especially dark green eats) are great sources of iron, magnesium, calcium, potassium, and folate, and Vitamins A, C, K. K is little known by most folks, but is vital for blood clotting, and may protect against osteoporosis. The best source by weight? Parsley! Eat your garnishes!

Yellows, Oranges, and some Reds: carotenoids. Carrots for your eyes, right? That's from carotenoids, which are powerful anti-oxidants. They soak up harmful light wavelengths and damaging chemicals (in plants, ones that are generated by photosynthesis.) In humans, they're most well known for converting to Vitamin A in the intestine. In the eye, Vitamin A is a building block of the receptor molecule that detects light. Carotenoids are fat-soluble, so if you eat too much, you can start sporting a distinctly orange tint. As delicious as roasted carrots are, they shouldn't be the only vegetable you eat.

Reds and Purples: anthocyanins (and some pale yellows - anthoxanthins) Anthocyanins are known to be antioxidant, and research is pointing towards their ability to be anti-inflammatory, neuro-protective, and preventive against diabetes and cancer. My fave source of anthocyanin is blueberries.

Red and Yellows: betaines. Betaines are famously found in beets (but also found in chard, spinach, quinoa, wheat germ/bran, and marine invertebrates...) Humans don't metabolize betaines efficiently, which is why eating a lot of beets in one sitting can lead to startling effects. In the human body, betaine is an osmolyte (protects cells, proteins, and enzymes against environmental stress) and is a methyl donor. Methyl donatio has multiple complicated pathways in the body, but the elevator pitch is that betaine is protective against coronary and vascular diseases.

Plus, fruits and veggies are full of fiber to keep you and your tp supply regular.

Today's lunch is pantry pilaf. What's in your vegetable drawer? (I used up some aging spinach and snap peas, along with carrots, frozen peas, onions, garlic, sweet potato, red lentils, raisins, pecans, and a touch of nutritional yeast.)

So you've stocked up...what do you do with all that food?

My breakfast today:
Muesli - rolled oats, dried fruit, nuts and seeds. If I'm feeling fancy, chocolate bits. Because I've got them in-house, frozen blueberries, frozen cherries, and some ground flax seed. I pour some oat milk over the mix, wait for the oats to soften and frozen berries to defrost a little, and jump in.

Lunch right now is roasted broccoli, steamed carrots, fresh grape tomatoes, a drizzle of tahini, and balela.

Balela recipe (it's very much a mix until you like the taste recipe):
garbanzo beans (cooked)
black beans (cooked)
sundried tomatoes, chopped
onion, diced
mint & parsley (chopped)
olive oil, cumin, salt & pepper, lemon juice
optional: hot chilies, olives, sumac, garlic, apple cider vinegar

Meanwhile, I have chunked sweet potatoes tossed in olive oil and salt and pepper and chicken thighs rubbed with miso in the oven.

Stocking up your kitchen for a period of isolation?

Here's my list of staples (adjust for your dietary needs, of course - I eat low-dairy and mostly gluten-free):

Root veg that can be stored in a garage, basement, porch, or other place that is cool, but not cold like carrots, potatoes, beets, sweet potatoes, winter squashes. Opt for colors over white for denser nutrition.

Packaged, bulk, shelf-stable:

Rice, pasta, cookable grains like quinoa, millet, amaranth, etc.
Beans, lentils - dry and canned.
Canned tomatoes, salsa.
Peanut butter, dry nuts and seeds.
Coconut milk, oat milk.
Tofu (in tetrapak packaging; otherwise - refrigerated)
Onions and garlic.
Spices (my must haves are cumin and thyme, but I also have a huge spice collection.)
olive oil
sesame oil
tamari / soy sauce
rolled oats
dried apricots or other dried fruits (because I love them.)
chocolate and/or your favorite treats.
if you're a milk drinker, powdered milk or shelf-stable milk.

Perishables that need refrigeration:

eggs
broccoli and other veg
milk
cheese
curry paste
miso
Tahini once opened

Freezables:

shredded cheese can be frozen
our household eats chicken, so we have thighs in the freezer
bread can be frozen
frozen veg (you can also get fresh veg and blanch/shock/freeze veg)
coffee

Fruits like apples and oranges can be stored at room temp for a long time.

Foods on my not-necessary but nice to have list:

crackers
popcorn

Hello!

I am a personal chef with extensive restricted diet and allergen-aware experience. I have cooked in restaurants, in day care centers, in client homes, and in community catering. As a personal chef, I come into your home and feed you - that can be one special dish or meal, catering a party, filling your freezer with easily reheated times during a busy time in your life, or a few days or a week of meals to grab and go in your fridge.

In this pandemic, I will not be entering client homes until we have a vaccine.

I am unable to legally cook in my home professionally. I am talking with a few kitchen about renting their space for meal services, and hope to be able to provide that service in the coming months.

In the meanwhile, I am happy to provide the following services. Because so many of us have limited incomes right now, all of my services will be sliding scale: pay what you can.
