It's birthday season at home ! With my princess turning 4 at the end of the month apparently it'll be all sprinkles, unicorns and rainbows until that day 😍
And to go with the theme we've been making these delicious Funfetti cookies with the kids :) ⭐️🎉🎂 With deep vanilla, butter and white chocolate flavors these are melt in your mouth delicious !

Funfetti (Birthday) cookies

8 ounces of butter
3/4 cup brown sugar
1/2 cup sugar
1 cup white chocolate chip cookies
2 eggs
2 teaspoons vanilla
3 cups flour
1 teaspoon cornstarch
1 teaspoon baking Soda
3/4 teaspoon salt
1 cup sprinkles (jimmies)

Preheat oven to 375F degrees.

In a bowl cream together the butter and both types of sugars. Stir in the vanilla.

Add the eggs one at a time, mixing well after each addition. Add the white chocolate chips and sprinkles and mix.

Sift the flour, cornstarch, baking soda, and salt together and add to the batter. Combine only - Do not over mix cause it will toughen the cookie.

Form medium sized cookies about (3 ounces balls) or larger if you like and take to the fridge to rest for at least 2 hours. You can skip this and go straight to the oven but they are will be so much yummier if they rest at least 2 hrs and better at 24 hrs (if you can wait that long 😋)

Bake for approx 10 - 12 minutes. please note time will vary depending on the size of your cookies so keep an eye on them until you see a light golden crust
Remove from oven and let them rest before enjoying them !
