Chicken breast marinated and grilled in honey mustard, topped with bacon & cheddar cheese. Comes with garlic mashed potatoes and steamed green beans.

This week’s cooking challenge from the Cordon Bleu Cookbook was the most unique yet! We make Oeufs Poches Georgette (Poached Eggs in Baked Potatoes). It was basically a twice baked potato stuffed with shrimp, a poached egg, and topped with béchamel sauce. We also tried a vegetable casserole called Aubergines a la Boston. Eggplant, onion, and mushrooms were caramelized and then mixed with a cheese sauce before broiling in the oven. Though the dishes may not have been very photogenic, they were absolutely delicious!
