This week’s cooking challenge from the Cordon Bleu Cookbook was the most unique yet! We make Oeufs Poches Georgette (Poached Eggs in Baked Potatoes). It was basically a twice baked potato stuffed with shrimp, a poached egg, and topped with béchamel sauce. We also tried a vegetable casserole called Aubergines a la Boston. Eggplant, onion, and mushrooms were caramelized and then mixed with a cheese sauce before broiling in the oven. Though the dishes may not have been very photogenic, they were absolutely delicious!

Week two of our French cookbook challenge!

This week’s recipe from The Cordon Bleu cookbook was Boeuf En Daube (Braised Beef) and Duchess Potatoes. The beef was braised in a lovely wine sauce, sweetened with a bit of jam. Duchess potatoes were mashed and piped onto the serving platter before warming under the broiler. This dish was relatively easy to make and the end product was both beautiful and delicious!

New cooking challenge! We’ve once again begun a weekly cooking challenge to help ourselves learn and grow as cooks. This new challenge will center around an old cookbook (circa 1947) that we acquired, called The Cordon Bleu Cook Book. This book was written by Dione Lucas, the founder of the New York branch of Le Cordon Bleu cooking school. Over the next few weeks we will be diving in to the art of French cooking as we attempt to decipher these timeless recipes. Follow along and maybe even try your hand at some of these too!

Cordon Bleu Cooking Challenge Week 1:
With the leaves falling and crisp Autumn breeze blowing, we wanted to start with some fall inspired dishes. The first course was an Apple soup which was very easy to make and SO delicious. It tased more like a light tomato soup than apple but that’s just fine. It was accompanied by fried Camebert Cheese Balls that were amazing as well. The main course was Chicken with Celery and Apple. This recipe was more difficult to decipher as the directions were not as clear. We ended up straining out the vegetables and apples before thickening the sauce and I think that is the correct way to make this dish. The apple was much more present in this dish and added a delightful sweetness.

This past week, we celebrated three birthdays in the family. We’ve always made the birthday meal request and last week Rachel asked for Bao buns and chocolate cheesecake, Abby asked for pretzel chicken (honey mustard chicken with crushed pretzel crust) and Julia (our sister-in law) asked for Philly cheesesteaks. Needless to say, it was a yummy supper week for us!
