Tips on making a rich, delicious tomato sugo (sauce). Make sure you boil it for a LONG time until translucent dark red blobs form on the top. Add enough salt and pepper and a herb is always delish! Lastly, if the tomato is too tart or acidic add something to sweeten it up... balsamic vinegar or sugar are good ones. Enjoy!!

Never a bad time for lemon meringue... whether you decide to go big or small!
Recipe:
Base
Crush a packet of tennis biscuits into crumbs, mix with melted butter and press into the dish you will be using. Put it in the fridge while you prepare the rest.
Meringue:
Separate 2 eggs and to the egg whites. Beat until lovely and stiff. Slowly add 9 Tablespoons of castor sugar while beating continuously until it gets a lovely smooth glossy look. Set aside
Lemon
Mix together 1 tin of condensed milk, 1/2 cup fresh lemon juice (don't use bottled), the egg yolk and the rind of one lemon.

Once mixed pour the lemon mixture into the base and then spoon the meringue onto the top making sure to make gentle peaks.
Bake at 160 degrees Celsius for 20/30 minutes depending on what size or shape you choose.
Wait till totally cool. Best consumed that day.

With the cold setting in again, try our DELISH FISH DISH! Super easy and yummy. Frozen hake pieces placed in an oven dish, spot some blobs of butter about the place and grate some fresh garlic on the fish. Liberally grind pepper and salt on the fish and grate a generous amount of parmesan on the fish. Combine a mixture of plain yogurt (full cream is great )and a 1/3 cream. Enough to cover the fish. Grate some more parmesan on the top and bake at 180 degrees Celsius for around 40 minutes (again dependent on how much fish you are cooking. Best served with fresh, uncomplicated veg and rice or baby potatoes. Enjoy!

EDITED: Yummy baby Yorkshire pud's!
For those asking for the recipe;
1/2 cup flour
2 large eggs
1 cup milk
Salt to taste

Mix the whole lot together with an electric be**er
Let it stand for an hour or two (you can even leave it over night if you want)
Heat up oven to 200 degrees Celsius
In a large muffin pan put 1 teaspoon of sunflower oil in each muffin cup. Heat until very hot in the oven.
Pour in the mixture and quuckly put bavk in the oven. Should make about 6 or so little pud's.
Bake for apprix. 15 to 30 minutes till they look like the picture.
Enjoy!

Too many delicious ways to use flatbread during lock down. Delish as a base for olive paste and anchovies, a garlic butter naan equivalent or pizza! So easy! Mix 2 cups of flour, 1 teaspoon of salt and a table spoon of baking powder with 1 cup of water and a tablespoon of olive oil. Kneed for a few minutes and let it rest for 30. Roll out and fry in a pan till golden brown. For pizza you can roll it thinly, put on the toppings and bake!

Nothing like a little Liver Pate for Lock Down sundowners!! So easy! Clean your chicken livers and saute/ fry them in some butter with garlic and onion. Add some sherry or brandy and simmer till tender. Add salt and pepper to taste. Even a little dried chilli if you feeling adventurous! Blend until very fine. Spoon into a serving dish and pour a thin layer of melted butter over the top of it to seal it. Refrigerate till butter sets. Nom nom!
