Get a loaf of that! 🍞

recreating the Uzbek bread (‘non’) set up of dreams last Silk Road Sunday

Snapped a quick pic of this bakery in 2018 in the centre of Samarkand and it spiralled into a bread stamp obsession. The baker was churning out the infamous stamped breads that accompanied most meals - roadside and restaurant.

Very happy to have once again been getting my Silk Road Sun-daily bread in Kernowstan!

🥕🌶🥬

Korean spicy carrots - delicious. in her beautiful book ‘Samarkand’ explains how this salad came to be:

‘Half a million Koreans arrived in Central Asia as deportees during World War II. Today, Uzbekistan has the largest population…(and) can be found selling their spicy pickled salads in bazaars throughout Central Asia. Without the right cabbage to make kimchi, Korea’s signature dish, they developed new salads that, until recently, weren’t known in Korea itself. This carrot version, representing a real fusion of Central and Eastern Asian cooking, is the most popular. Heat and tang from the East are paired with cumin and coriander, redolent of the local spice markets.’ Caroline Eden and Eleanor Ford, ‘Samarkand’.

I love leafing through cook books to find out more about the enjoyed on the road. Played a bit with this dish and added some kimchi for good measure!

This weeks Silk Road Sunday menu is (land)locked and loaded to go to Uzbekistan.

DOUBLE landlocked this Central Asian treasure is home to incredible food, architecture and in recent years has graced our screens with on her Silk Road Adventure!

Despite being landlocked, Uzbekistan is now much more open to visitors than neighbouring Turkemenistan. On my maiden voyage to Uzbekistan entry was by ‘letter of invitation’, changing to a patchy e-visa system and by my last visit (post Joanna) it went to visa free travel to keep up with the flurry of visitors!

Come and enjoy an Absolutely Fabulous meal inspired by Uzbek roadside lunches this SilK Road Sunday. 🌏⛺️🍴

AZERBAIJAN

I must admit my first meal in Azerbaijan consisted of Starbucks cheesecake and milkshakes.

Crossing the Caspian Sea from Turkemenbashi to Baku can take anything between 19 hours to 3 days. Ours took the latter. Some trucks have to wait, stuck in the ports, for up to a week for the boats to be fully loaded and the correct weather conditions to make the crossing. With two passengers quarantined on the boat in Baku with visa issues and a truck to unload it was no surprise I found myself making to the nearest food source and passing it through the port railings.

I really enjoyed thinking back to the beautiful meals enjoyed at homestays and the produce lining the roads in Azerbaijan for this Silk Road Sunday menu and getting inspiration from beautiful book of her journey to Georgia, Azerbaijan and beyond!

სუფრა [supʰra] : tablecloth : FEAST

This Silk Road Sunday 6-9pm we are in the Caucasus region and feasting in GEORGIA! Eat in at the polytunnel or takeaway. ☎️ Text 07399887406 to book.

The Georgian love for bringing people together with food and drink is why the feast supra (or tablecloth) is such an important part of Georgian culture. So much so that the Georgian Feast has been added to the UNESCO Intangible Cultural Heritage List.

‘The Great Silk Roads, that connected China with the Mediterranean world, developed since the 2nd century BC. It’s main route went through Iran and Syria...the Caucasian route gained importance in the 6th century when it became unprofitable to deliver silk to Byzantium and other Mediterranean countries via Iran for both economic and security reasons. Central Asian merchants, that provided Byzantium with Chinese silk, tried to explore a new route going north from the Caspian Sea, crossing the Caucasus range and proceeding via Georgia. It is known that the first caravan loaded with silk passed this route in 568.’ (UNESCO Silk Roads Programme)

So unlike the Georgian language which proves totally unique and unrelated to any language in the world, Georgian cuisine has benefitted from the spice trade from being on the Silk Road and shares similarities with Persian food and cuisines across the Caucasus.

As the tourist industry has risen in Georgia, the hidden gem that is their national cuisine is being revealed with more Georgian restaurants emerging in London and around the world 🌎.

Get your Georgian feast on the North Cornish Coast!
