Nigerian Fish Roll Recipe
Ingredients:
For the Dough:
400g plain flour
100g margarine or butter
1 teaspoon baking powder
½ teaspoon salt
1 tablespoon sugar
1 egg
½ cup water (or enough to form a non-stretchy dough)
For the Filling:
1 or 2 fresh mackerel fish (or canned tuna mackerel)
1 small onion, sliced
1 grated carrot (optional)
Salt to taste
Cayenne pepper to taste
Cooking oil for frying
Instructions:
Prepare the Fish Filling:
If using fresh mackerel, boil it with water, salt, and seasoning until cooked.
Allow it to cool, then debone and mash the fish.
If using canned fish, simply mash it. in a pan, heat some oil and sauté the onions until translucent. Add the grated carrot (if using) and stir.
Add the mashed fish, salt, and cayenne pepper.
Stir well and set aside to cool.

Make the Dough:
In a large bowl, mix the flour, baking powder, salt, and sugar. Add the margarine or butter and mix until the mixture resembles breadcrumbs.

Add the egg and mix well. Gradually add water and knead until you get a smooth, non-stretchy dough. Let it rest for about 5 minutes.
Assemble the Rolls:
Roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut into rectangles.
Place a spoonful of the fish filling at one end of each rectangle. Roll the dough over the filling and seal the edges with a little water.
Fry the Rolls:
Heat oil in a deep pan. Fry the rolls in hot oil until golden brown. Drain on paper towels to remove excess oil.

How to make sausage rolls
Ingredients
Flour 2 cups
Butter 1 cup
Egg 2 (1 for dough 1 for egg wash)
Baking powder 1 tsp
) Nutmeg 1/2 tsp
Ground Sausage (like 500g )
)Milk 1/2 cup using Tin milk?add 5tsp
Salt ( a pinch)
Sugar 2 tsp
Curry 1/2 tsp
Thyme 1/2 tsp
How to make it.
Add to your flour salt, sugar, nutmeg, baking Powder, mix together, add butter, mix well, add milk gradually until not too hard nor too soft, cover for 10 min to rest.
To your ground sausage, add curry and thyme,
DO NOT ADD salt or seasoning to your sausage, it will come out salty.
Then cut your dough into 3, roll one at a time, to a rectangle shape, add your suausage to one side, then roll and cut to sizes of your choice.
Use your egg wash to paint, for that shiny finish like the picture, bake for 25 min at 180c•

LEARNING TIME

Homemade Meat pie.

Ingredients:
For the pastry:

4 cups (500g) all-purpose flour
200g cold Butter, cubed
2 Eggs
If the butter has salt then add
1 tablespoon sugar
1/4 cup (60ml) cold water

For the filling:
•3/4 pound (350g) Ground beef
1 Potato, peeled and diced into small cubes
1 Large Onion, chopped
1 Large Carrot, peeled and diced
Salt to taste
Pepper to taste
1 teaspoon Thyme
2 tablespoons Oil
1 egg for brushing

How to prepare:

-Make the pastry: in a large bowl mix together flour, sugar
-Add cubed butter and rub it with the flour until you get a crumbly texture.
-Beat 2 eggs with cold water and add it to the flour mixture, mix until dough is formed. Cover for 30mins.
-Make the filling: in a large pan heat oil. Add onion and sauté for 5-6 mins.
-Add diced carrots and cook for 3-4 mins.
-Add the meat, breaking it apart, for 4-5 mins; Season with salt, pepper nd thyme
-Divide the dough into 4 pieces. Roll out the dough into 1/8-inch thickness. Cut out a round shape with your desired sized.
-8. Place about 1-2 tablespoons of the meat mixture in the center and fold over the dough. Seal it with your fingers or with a fork. Poke the pies with a fork to create a steam outlet while baking brush the pies with beaten egg.
-Bake for 25-30 minutes, until golden. Cool slightly before serving.

Mini Chinese sponge cakes
Ingredients
-1 cup all-purpose flour
- 1/4 cup custard powder
- 1 tsp baking powder
-1/2 tsp baking soda
-4 large eggs
- 314 cup granulated sugar
-1/4 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
Instructions
Set up a steamer with boiling water. Ensure you have mini cake molds or cupcake liners ready.
In a bowl, sift together the flour, custard powder, baking powder, and baking soda. Set aside.
In a large bowl, beat the eggs with the granulated sugar until light and fluffy, about
5-7 minutes.
Mix in the milk, vegetable oil, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
Do not overmix.
Divide the batter evenly among the mini cake molds or cupcake liners, filling each about 2/3 full.

Place the molds in the steamer and steam over medium-high heat for about 12-15 minutes, or until a toothpick inserted into the center comes out clean. Remove the Mimi cakes from the steamer and Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
Do not overmix.
Divide the batter evenly among the mini cake molds or cupcake liners, filling each about 2/3 full.

Place the molds in the steamer and steam over medium-high heat for about 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Remove the mini cakes from the steamer and let them cool slightly before serving.
