With Easter right around the corner, I thought I would share one of my mom's favorite recipes. If you like coconut you are going to love this cake!

If you can't find the cream of coconut, you can use a package of fresh frozen coconut, 1 cup sugar and 1 cup milk. Bring to a boil and pour over warm cake before topping with cool-whip and more coconut!

Coconut Cream Poke Cake starts with a boxed cake mix and is covered with a creamy and sweet cream of coconut filling and a coconut topping!
