11/04 (Fri) Méxican Cooking Demonstration + Mezcal Tasting with Héctor Guerrero from Chuparrosa 6:00-9:30PM

In this demonstration Héctor explains the nixtamal process- (the prehispanic process of making corn masa) In his class you will be using the local organic 3 sisters nixtamal (masa). We will use the masa to make traditional tortillas, sopes, etc.
We will be cooking:
Calabazitas Rellenas (stuffed squash with flor de calabaza (squash flower), elote (corn), caramelized onions, epazote and other mexican herbs)
Nopal Asado Relleno (grilled cactus wrapped with Oaxaca cheese)
Mole Verde-Pipian-Green Mole (paired with pulled pork prepared in advance, or calabaza above for vegetarians)
Salsa Verde de Arbol de Molcajete- roasted tomatillo salsa
*entire menu is gluten free
Mezcal Tasting- we will share besitos (kisses-tastes) of Oaxacan mezcal and talk briefly about the process, difference between mezcal/tequila, what creates the varying flavor profiles.
Beer, wine and non-alcoholic refreshments
At the end we will sit down to enjoy the fruits of our labor together and dine in the Mildred Hall garden!
