Being of Mediterranean descent I love to cook and eat the food of my culture. So tonight, not wanting to take a trip to the grocery store, I decided to put my own spin on a dish with what I had in the fridge. Some delicious local greens, roasted seasoned Cauliflower and Chickpeas over quinoa with a yummy spicy tahini and fried pumpkin seeds. Light and healthy!

I knew it would happen….. 🤪I am thrilled beyond belief that my Granola Bites are taking off and selling out! To keep up with production, I am ironing out the kinks of my little business as it grows. I love that other businesses are starting to jump on the compostable packging ban wagon, but when I went to order more bags to fufill orders, they were sold out till next month and I had to scramble to find another supplier😜 We are now puttting in larger orders so we don’t have to experience this again. We also went ahead and bought another dehydrator and are working on building a press so I don’t have to roll out every batch myself. I am grateful to have such issues so early on and welcome all the learning curves it takes to run a successful business.. It’s very exciting! I love what I do and so happy that I can sell a product that is healthy for you and the planet! As our logo states, Happy Food, Happy Planet!

The timing was right and we are ready for it! Happy Hippie Granola Bites will now be on the shelves of both Downtown and Cordato stores starting next weekend! I’ve had several requests for the recipe of the Coconut Carrot Curry Soup I posted yesterday so here you go!
3T Butter or Plant based butter {I prefer Miyoko’s. Its a healthier choice and is far superior in taste then other plant butters}

1/2 Medium Onion roughly chopped

3/4lb Carrots cut in 1inch coin size

2T Ginger finely chopped

1tsp Cumin

1tsp Turmeric

1tsp Coriander

Pinch Cayenne pepper to taste

2 Cups Chicken or Veggie broth {I prefer the ‘No Chicken Broth’ bouillon the best if doing vegan}

1 Can of unsweetened coconut milk

1/2 of a Lime juiced

Black pepper and Salt to taste

In a large pot melt butter then add chopped onion, carrot and ginger and stir/sweat till carrots are somewhat soft. Add herbs while stirring.
Add broth in pot and continue to cook until carrots are soft.
Blend with immersion blender, in food processor, or high powered blender.
Add coconut milk with all other ingredients in pot, heat, and add Lime.

You can sauté some Kale with olive oil salt and pepper in a pan and add on top of soup with some sautéed tempeh { I LOVE tempeh} or tofu I also roast up pumpkin seeds with coconut aminos to throw on top of soup as well.

This Garden Party was for my very dear friend to celebrate her engagement to her lovely man . We had such a wonderful time! When I turned 50 5yrs ago, I said to myself “You should try a race before 60 for fun” Then along came World Cup Races! I was terrified, but knew that they had created these races for all to participate and made it super fun! Signed up and was hooked. So I signed up for another, and now I have 2 more I am signing up for! But what gave me the courage to finally do this was my husband signing me up for Fast Track Fridays with the amazing from This clinic helped build my confidence on the bike as well as meet new ladies, now my bike buddies, to ride with! I cannot thank her enough for all the skills and courage she helped bring out in me to make it happen.
