Empandronada is coming with a one day 🌱 plant-based POP-UP at Skaftfell Bistro on Saturday the 15th February 17:00-21:00.

Come and try food influenced by various cultures, with textures that might surprise you. From molecular gastronomy to comfort food!
Served to you alongside bespoke cyanotyped napkins printed with local seaweed. 🌊

Gudrita Lape is an interdisciplinary artist from the capital area of Iceland,
currently based in Seyðisfjörður, Iceland. Her background spans fine arts,
sociolinguistics, and electronic textiles. Creating plant-based food has been her
self-taught project, running parallel to her artistic career for over a decade.
The project emPANdronada Ethical Food began in Valencia as a means of selfdiscovery and survival as a perpetual immigrant. Over time, it has evolved into the
synthesis of Gudrita’s two greatest passions: art and plant-based cuisine, where
she creates sensory experiments and edible installations.
Lightspeed is a collaboration between SKAFTFELL BISTRO, EMPANDRONADA, and
LIST Í LJÓSI, offering a plant-based dining experience that takes you on a whirlwind
trip around the globe. Guests are encouraged to get their hands dirty and fully
engage their senses. Each dish radiates radiance and vibrancy - just like colors,
which are in fact, different wavelengths of light.

I’ve been looking forward to serving some seaweed from the east fjords of Iceland but it’s not the season yet, so let’s start an introduction with some cyanotyped napkins using seaweed.
