Cranked out brisket and jalapeño-cheese sausage for a fiddy top rehearsal dinner. Carbonara Mac-n-cheese, bacon braised collards, glazed donut bread pudding, peanut butter-banana pudding plus Pigasus Quickles and all the fixins. Thankful for the opportunity to do the work. Best of wishes to the lovely couple. God is good.

Traditional elote crema with cotija, chili, and lime, maybe a a basil-lime aioli with Romano, and some fun toppings; crushed Fritos, crushed flaming hot Cheetos, crushed Funyuns, bacon, cilantro, chives, smoked cheddar, diced onions, diced tomatoes, lime, queso fresco, and what else?! Trying out Granny Moore’s Good Rub from buddies outta Dawson, GA. Sweet tea brined and smoked 2.5 hrs at 275° with pecan. Nice sweet and salty crust; super tender and juicy.

Might add peaches to the brine. Might find some peach wood. Might work a chipotle-peach bbq glaze. Might have pickled peaches a la my Grandma Polly. Might have it all peachy perfect by Labor Day weekend. 🍑 🌶 🍗
