This week I'm cooking Chicken Fricassee for my clients.

organic chicken thighs with a white wine butter broth, mirepoix, fresh fennel, local mushrooms, and a few fresh bay leaves from San Francisco served over arborio rice that I cooked in a pho bone broth!

Hey everybody!

We hope you're having a great last few weeks of summer! We just wanted to give a shout out to our community and tell you what we've been up to. Everybody keeps asking, "Hey, what's happening with The Red Checkered Tablecloth?!"

The RCT has been on a journey these past couple of years. We went from food truck, to catering, and we've done a little of everything in between. Lately the primary function of this business has been for meal planning, private chef events, and business drop offs. A few regular clients have kept us busy all summer, but going into the fall there will be some more openings if you might be interested in jumping on one of our meal plans! Stay tuned for another post in the near future if you'd like to hire us to do meal planning for your family!

In the meantime here's just a couple quick photos of dinners we've been bringing our clients! Every meal comes with soup or salad, main entree, AND dessert! We would love to invite a couple more clients to join our meal plan going into the fall. More info coming soon!

What's your favorite Italian meal?

For me personally, it has to be the Eggplant Rollatini! The thinly sliced crispy eggplant 🤤 rolled with a garlic-herb ricotta filling, then dotted with tomato gravy, and fresh mozzarella on top... It is seriously just the best! Don't forget the grated Locatelli cheese to garnish (the only choice for amazing grated cheese)!

Hello Everybody,

I would like to take this time to share with you the future of The Red Checkered Tablecloth. I have learned a very many great things about this business since I began working on the brand a year ago. We have celebrated small victories and achievements along the way that paved the pathway to be able to do this. I have had incredible resources and assistance from friends, colleagues, neighbors, and the wonderful people in this town. There are simply too many to name, and I couldn't have done it without you.

The support from this community and the encouragement I've received has been an overwhelming blessing to me. I am so happy I had the opportunity to bring you the Italian comfort food I grew up with as a mobile food vendor open to the public. As we move forward we will continue to promote this brand, and offer you the great comfort food you know and love. While the roadside service has been rewarding, The Red Checkered Tablecloth has grown with its demand for catering and private events. Being a caterer/private chef is something I have been doing for the past decade for many people in the local area. It is my passion to cook for your private events, and to bring you my talents in a more intimate setting. You want to throw a party? I will cook for you! It's your 25th wedding anniversary, your daughter is getting married and you need a caterer, It's your birthday and you need a professional cake for the occasion, or perhaps you just want to throw a good old fashioned dinner party where you invite your friends over.. Count me in! Perhaps you are feeling overwhelmed with the demands of business and life, and you would like to make sure your family is well fed this week.. I will cook for you! It is in these settings where I feel most passionate. It gives me an opportunity to bring you a more personal experience.

The demand for these types of events has increased so much so that I have decided to pull back on roadside service all together. Over the next few weeks The Red Checkered Tablecloth will be transitioning and rebranding to catering and private events only. There are currently some offerings on the website theredcheckeredtablecloth.com
Just click on the catering tab. Though Italian comfort food is the specialty, I have a lot of experience also bringing the community a more farm-to-table experience as well. I will be working closely with some of our amazing business contacts to assist in the rebrand and move fully into this direction.

Looking back I believe the food truck has served its purpose, and it is enabling the business to now move into this direction. If you are interested in hosting an event please reach out at [email protected]

I have an amazing staff that is ready to be on call to work as needed, and together we will provide a memorable experience for you. It has been wonderful serving you from the food truck. I have met so many amazing people, and I hope that I can still be a part of your journey only now in a more personal way. Hey Everyone,

We have decided to take a moment starting today to rejuvenate and focus on health while we reflect on the business brand. We want to thank you for your amazing support! We will come back to you with some exciting news to share in the near future. For now roadside events will be put on hold while we air out and dream big. Thank you neighbors, friends, and our community for all of the encouragement. Your support has been a blessing, and we are proud of the brand we've worked hard to create. We are going to take a few moments now to engage in our surroundings and to allow for some much needed rest.

Thursday night we're going to shift our hours to a little later for the summer months. The dates that we will start serving Lyons (found on our website homepage) we will start serving from 5:30-8:00 now.
