It's the final countdown... Kids go back to school!!!

Here is an idea for lunchbox options for the kiddies! Hope this helps!

2 slices low-sodium oven-roasted turkey
1 slice havarti cheese
1/2 Tbsp mayonnaise
1/2 cup vanilla Greek yogurt
1/2 cup chopped strawberries
1/2 cup sliced cucumbers
1/4 cup grape tomatoes, halved
1 Tbsp Ranch dressing

Step 1: Stack turkey slices; top with cheese and spread mayonnaise on cheese. Roll up, and cut into small pieces, if desired.
Step 2: Divide prepared roll-ups, yogurt, strawberries, cucumbers, tomatoes, and Ranch among lunchbox compartments.

Sweet-n-Sour Chicken Bowls (a kid friendly idea)

What you need:
3/4 lb boneless, skinless chicken breasts, cubed
1/4 cup low-sodium chicken broth
3 Tbsp low-sodium soy sauce
2 Tbsp sesame oil
2 Tbsp packed brown sugar
2 tsp garlic powder
2 Tbsp olive oil
1/2 Tbsp cornstarch
1/2 peeled and cored pineapple, cubed (Canned is ok)

SIDE DISH INGREDIENTS
3/4 cup long-grain white rice
1 (12-oz) pkg broccoli florets

Step 1: Toss together chicken, broth, soy sauce, sesame oil, brown sugar, and garlic powder in a large bowl. Cover, and refrigerate at least 4 hours. Remove chicken from marinade, reserving marinade in bowl.
Step 2: Cook chicken in hot olive oil in a large skillet over medium-high heat until browned and done.
Step 3: Meanwhile, whisk cornstarch into marinade in bowl; add to skillet along with pineapple. Bring to a boil, reduce heat, and simmer 2 minutes.

SIDE DISH DIRECTIONS
Step 1: Cook rice according to package directions.
Step 2: Cook broccoli according to package directions; season with salt and pepper, if desired.

MUDSLIDE
A cold and creamy frozen mudslide is a dessert cocktail for all chocolate lovers! Blend ice cream with Swiss Miss Dark Chocolate, coffee liquor, vodka, and ice and top with Reddi-wip and more chocolate!

2 cups vanilla ice cream
1 cup ice
2 envelopes (1.25 oz each) Swiss Miss Dark Chocolate Hot Cocoa Mix
2 fluid oz coffee-flavored liqueur
2 fluid oz vodka
1 tablespoon chocolate sauce
Reddi-wip Original Dairy Whipped Topping
chocolate shavings, optional

Pour ice cream, ice, Swiss Miss, coffee liquor and vodka into blender and blend until smooth. Drizzle chocolate sauce around sides of glasses. Pour frozen mudslide into glasses, top with Reddi-wip and garnish with chocolate shavings.

1 lb ground beef
4 cups cubed pumpkin (or use butternut squash)
1 onion, chopped
2 cloves garlic, minced
2 (14.5-oz) cans petite-diced tomatoes
1 cup beef broth
1 1/2 Tbsp chili powder
1 Tbsp ground cumin
1 (11-oz) pkg tortilla chips
1 (8-oz) pkg shredded Monterey Jack cheese
1 (8-oz) carton sour cream
4 green onions, thinly sliced

A delicious vegetarian option that can be eaten by even those that love their meats! A healthy choice for any time of the day... Try our Sun-Dried Tomato, Spinach, and Orzo Frittata

½ (16-oz) pkg orzo
1 (10-oz) pkg frozen chopped spinach, thawed
3 cloves garlic, minced
1 Tbsp olive oil
12 large eggs, lightly beaten
¾ tsp salt
½ tsp pepper
½ cup crumbled goat cheese
⅓ cup sliced sun-dried tomatoes in oil

Preheat oven to 375°F. Cook orzo according to package directions.

Squeeze spinach dry using paper towels. Cook spinach and garlic in hot oil in a 10-inch ovenproof skillet over medium heat 5 minutes. Stir in orzo.

Whisk together eggs, salt, and pepper in a large bowl; gradually pour over spinach-pasta mixture in skillet. Top with cheese and tomatoes.

Transfer skillet to oven, and bake 20 minutes or until center is set.

Lemony Arugula Salad

1 (5-oz) pkg baby arugula (or use spring mix)
¼ cup refrigerated lemon vinaigrette
½ cup crumbled goat cheese

Toss together all ingredients in a serving bowl. Serve over Frittata if desired.

So as the Summer is (supposedly) coming in, give this one a try. Nothing like Shrimp Salad Rolls, especially while sitting outside enjoying a pool day or even a BBQ.

Ingredients
1½ lb peeled and deveined, wild-caught large cooked shrimp
⅓ cup olive-oil mayonnaise
¼ cup plain Greek yogurt
2 Tbsp lemon juice
½ cup chopped celery
3 Tbsp chopped fresh parsley
½ tsp smoked paprika
½ tsp salt
½ tsp pepper
6 hoagie rolls (preferably whole wheat)
3 Tbsp butter, softened
2 cups baby spinach (or use lettuce)

Coarsely chop shrimp. Combine shrimp, mayonnaise, yogurt, lemon juice, celery, parsley, paprika, salt, and pepper in a medium bowl; chill until ready to serve.

Cut a slit down center of each roll; brush cut sides with butter. Heat, cut sides down, in a large skillet over medium-high heat 2 minutes or until toasted.

Serve shrimp salad and spinach in rolls.

Apple and Grape Balsamic Salad

1 Tbsp white balsamic vinegar (or use other balsamic vinegar)
1 Tbsp olive oil
1 Tbsp honey
4 organic apples, chopped
2 cups seedless green grapes, halved

Whisk together vinegar, oil, and honey in a medium bowl; add apples and grapes. Toss.

Cheeseburger-Stuffed Shells

Ingredients
1 (12-oz) box jumbo shells
1½ lb ground beef
1 cup chopped onion
2 cloves garlic, minced
1 (8-oz) can tomato sauce
½ cup ketchup
3 Tbsp Dijon mustard
1 Tbsp Worcestershire sauce
1 (8-oz) pkg shredded Cheddar cheese, divided
½ cup chicken broth
1 (8-oz) pkg shredded lettuce
1 cup sliced dill pickles
2 Roma tomatoes, chopped

Preheat oven to 350°F. Cook pasta shells according to package directions; drain and keep warm.

Meanwhile, cook beef, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet. Stir in tomato sauce, ketchup, mustard, Worcestershire sauce, and 1 cup cheese.

Spoon mixture into pasta shells, and place, meaty side up, in a lightly greased 13- x 9-inch baking dish. Sprinkle with 1 cup cheese. Pour broth around pasta shells in dish.

Bake 20 to 30 minutes or until hot and bubbly. Top with lettuce, dill pickles, and tomatoes.

We cant seem to get passed this weather we are having... one minute cold, next hot... so its still technically SOUP weather! There is ALWAYS SOMETHING about a Tomato Soup and Grilled Cheese that always works! Always!

Roasted Tomato Soup
Ingredients
2 (28-oz) cans whole peeled tomatoes
2 shallots, quartered (or use 1 small onion)
6 cloves garlic
2 avocados, halved
¾ cup almonds, divided (or use sliced almonds)
1 (1-oz) pkg fresh basil, separated into leaves
1 tsp pepper
½ tsp salt
1 (32-oz) carton low-sodium chicken broth, divided
1 bunch watercress (optional)

Instructions
Preheat oven to 450°F. Stir together tomatoes with liquid, shallots, and garlic on a foil-lined rimmed baking sheet or roasting pan. Bake 15 minutes or until shallots and garlic are tender.

Chop 1 avocado; slice remaining avocado.

Carefully transfer half of tomato mixture to a blender. Add 1/2 cup nuts, basil, pepper, salt, 2 cups broth, and half of chopped avocado.

Remove center of lid, and cover with a clean kitchen towel. Process until smooth. Transfer to a Dutch oven. Repeat with remaining tomato mixture, broth, and chopped avocado.
Bring soup to a boil over medium-high heat; reduce heat, and simmer 5 minutes. Garnish each serving with sliced avocado, 1/4 cup nuts, and, if desired, watercress.

Kale and Caramelized Onion Grilled Cheese

Ingredients
1 small red onion, diced
2 Tbsp olive oil, divided
1 (5-oz) pkg baby kale
1 tsp balsamic vinegar
12 (1-oz) slices whole-grain sandwich bread
6 (0.7-oz) slices Havarti cheese

Instructions
Cook onion in 1 Tbsp hot oil in a large skillet over medium-high heat 10 minutes or until tender and browned. Add kale and vinegar; cook 2 minutes. Remove from skillet; wipe skillet clean.

Top 6 bread slices with kale mixture and cheese; cover with remaining bread.

Cook sandwiches, in 2 batches, in 1/2 Tbsp hot oil per batch in skillet over medium heat 3 to 4 minutes per side or until cheese is melted.

Do you love steak? Nothing better than a juicy delicious steak? Well then, try my Tuscan Flank Steak.

Ingredients
2 Tbsp Italian seasoning
2 tsp pepper
1 tsp salt, divided
½ tsp paprika
1½ lb flank steak, trimmed
1 (12-oz) jar roasted red peppers, drained
½ cup low-sodium chicken broth
1 Tbsp balsamic vinegar
3 Tbsp chopped fresh basil

Combine Italian seasoning, pepper, 1/2 tsp salt, and paprika. Rub all over steak, and transfer to a greased broiler pan. Let stand 10 minutes.

Process roasted peppers, broth, vinegar, basil, and 1/2 tsp salt in a blender or food processor until smooth. Transfer to a saucepan. Cook over medium heat 5 minutes or until thickened.

Preheat broiler. Broil steak 10 minutes, turning once, or to desired temperature. Let it stand for 10 minutes before thinly slicing across the grain. Spoon sauce over steak.

Sauteed Squash and Onion
Ingredients
3 zucchini, sliced
2 yellow squash, sliced
1 red onion, sliced
½ tsp salt
½ tsp pepper
2 Tbsp olive oil
½ cup freshly grated Parmesan cheese
½ cup chopped walnuts

Instructions
Saute zucchini, squash, onion, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 10 minutes or until tender. Sprinkle with cheese and nuts.

Coffee Rubbed Roast Beef sliced super thin... this simple to prepare roast makes amazing sandwiches. Combine a little sour cream or Greek yogurt with horseradish for an easy sandwich spread.

Prep Time: 5 minutes + 30 minutes brine time
Cook Time: 1½ hours
Yields: 8 servings

Ingredients:
2 teaspoons vegetable oil
2 tablespoons Coffee Rub
2 to 2 ½ pound eye of round roast
Espresso Chili Brine

FIRST Prepare brine, using Espresso and Chili Powder blended together in water. Place roast in a deep bowl and brine at room temperature for 30 minutes. Preheat oven to 500°F. Discard brine and pat roast dry. Rub roast with oil and generously coat all sides with coffee rub.

NEXT Place a wire rack atop a foil lined baking sheet. Place roast on rack and cook for 5 minutes per pound. Turn oven off (do not open oven door) and continue to cook for 1 – 1½ hours. A meat thermometer inserted in thickest part of roast should register 130°F for medium rare and 140°F for medium. If roast is not done after 1½ hours, heat oven to 225°F for 5 minutes, turn off, and continue to cook until roast reaches desired temperature.

LAST Let roast rest for 15 minutes before carving. Slice very thin using a serrated knife and serve.

Lord, I thank you. Everyday. All day. And forever. Amen.

I accept the principle that abundance and prosperity have already been given to me and my family. Grocery shopping is a blessing, a privilege and a joy. If you all only understood the level of excitement within my soul when I shop for food. Food excites me. Eating flavorful food excites me.

Am I thankful for my taste buds? Absolutely. Am I thankful for these seasoned hands that God blessed me with? Absolutely. Blessings upon top of blessings, my blessings are abundantly ginormous and I’m oh so grateful.

I know, I talk about food with such passion. And it is indeed my passion. I’m proud to say that I am passionate about all things culinary. There is love in everything that I do. Because I am love. All the time I hear, “Joe, you take food to another level. I thought I loved food. But you man, you’re just different.”

I’m flattered and humbled by those accolades. Accolades along with passion are the driving force to creating culinary masterpieces such as this visually appealing, stuffed manicotti shells with marinara sauce. When I tell you that the first bite of this mouthwatering delight humbled me. Believe me. It humbled me deep down into the depths of my soul.

So, when everyone at the table was carrying on and having food-gasms, I understood. When they began to ask questions like, “Joe how did you make the manicotti shells? How did you get it to taste like this? How did you make this sauce? How come I haven’t ever had anything like this at any restaurants before?” I simply smile.

They just don’t understand that there’s magic in these hands and I give thanks daily; continuously.

Thank you, Lord, for my unique gift. The one you created just for me and only me. Thank you for your unlimited blessings, guidance and protection on my family and I. Thank you for my exceptional taste buds; the full range of motion in my arms, hands and fingers; the ability to smell, taste, touch, feel, breathe and think.

And for all my loved ones who grace me with their presence at the table, I thank you. Unity is love and I thank you for unconditional love. I’m blessed beyond measures. My soul is rich. Our soul is rich. We are safe and all is well…
