Chef Craig’s Easy Fixin’s
Turkey Leftovers

Here’s a simple recipé for
Turkey Pot Pie
Serves 4-6

Prepare a Marie Callender’s LARGE frozen pie shell following the instructions on the package for a “meat pie”

Sautée 1/2 cup of carrots + 1/2 cup of onion in a nice sized sautée pan with a couple of tbsp of butter - gently toss in some mushrooms cover and simmer with a bit of chicken stock until the veggies are partially cooked

Add 2 cups of left over turkey and 1 can of cream of chicken soup - stir in 1 can of water - add 1/2 cup of frozen peas and bring to a simmer

Pour mixture into a LARGE Marie Callender’s frozen pie shell - carefully place the top crust and paint with an egg white

Poke a some air vents in the pie - place the pie on a cookie sheet and pop into a pre-heated 350° oven for approx 35-40 minutes

Pie is done when its bubbling and the top crust is golden brown

Do the same if you prefer smaller ramekin sized individual pies

Chef Craig’s Easy Fixin’s
Need some good ideas for Turkey Leftovers?

Here’s a simple recipé for
Southern Creamed Turkey
Serves 2
(you can substitute Ham for the Turkey)

Prepare a basic Bechamel Sauce
Don’t freak out - its simple and easy to remember
3 - 3 to 1
3 tbsp of butter
3 tbsp of milk
1 cup of milk

I like to use a heavy sauce pan and a wooden spoon
The secret is in doing this slowly.

Slowly melt 3 tbsp. butter over low heat in a nice sauce pan
When its nicely melted but not bubbling,
Gradually stir in 3 tbsp of all purpose flour - don’t let it turn brown
Slowly add 1 cup of milk and continue to stir over low heat
The sauce will begin to thicken as it heats up
DON’T LET IT BOIL
Add some grated cheese if you like when it thickens
DON’T LET THE SAUCE BUBLE OR BOIL

Add a handful of turkey or thinly sliced ham leftovers
and maybe a sliced hard boiled egg or two if you like

If the sauce is too thick, you can always thin it a bit
by slowly adding little bits of milk

Remember that you can NEVER thicken the sauce by adding more flour - that just doesn’t work

Add Salt and pepper to taste and serve over toast slices or biscuits

Double or triple the recipe to serve more
