Family day ☺️

After a busy week it was great to spend Easter Sunday with my little family at aldeburgh in Suffolk by the sea, enjoying fish & chips from 🐟 followed by Easter Monday enjoying lunch with my mum & dad✨

Now getting prepared for a pop-up dinner tomorrow night at 🍷

Here’s a few more action shots from this weekend’s private dining events 📸

Three different locations, three different menus and three different groups of people to cook for, celebrating a 40th birthday, 21st birthday and 60th wedding anniversary ✨

It was a real pleasure to cook for them all and help make memories celebrating their special occasions ☺️

The very first of the ultra local asparagus delivered to me on a bank holiday ensuring the absolute freshest possible product for my clients this weekend 🙏

You will get to network with like minded business leaders and decision makers in an exclusive venue, with the chance to create new business relationships and share challenges/insights with your peers before sitting together around communal tables to enjoy a top quality English breakfast! 🍳

Time: 10am to 11:30am

Last MONDAY of the month is open specifically to hospitality businesses.

A few highlights from a busy weekend 📸

Friday night was a sold out Interactive Chef’s Table, and the last of the current menu. Swipe through pics for the new menu, which is a real celebration of spring, and head to the link in bio to book your seats. The diary is currently open until the end of May, more dates being released soon 🔗

Last night was a private dinner in Windsor 🏰

On the chosen menu:

The perfect balance 👨‍🍳

Saturday was all about looking after my guests at our totally sold out Chef’s Table event at CHEF School Of Cookery, then Sunday was a wholesome day with the family, watching my son play football, dusting off the barbecue and enjoying a walk in the Essex countryside ✨

We’ve got a very busy couple of months lined up now, which is just how I like it, delivering private events at our client’s homes, Chef’s Table events at our HQ and doing cookery demonstrations at food festivals across Essex and London!

Always flavour first! 👨‍🍳

A sentiment summed up by one of my signature desserts, pictured above, steamed Seville orange marmalade pudding with whisky ice cream - just a grown-up version of a childhood favourite, jam sponge and custard; and not a micro herb in sight 😬

Those who know me and have tried my food will know that I can’t stand style over substance! 😤

You won’t find foams, powders or gels on my menus, for me it has to be substance over style every time 💫

With my food I try to bridge the gap somewhere between ‘appetising’ and ‘fine dining!’ Simple, clean, and delicious 😋

If you would like to eat some of my no-fuss, substance over style cooking, while watching me cook it in front of you, I can either come to your place, or you can come to mine…

Save the date… 😬

On Sunday 6th April 2025 we will be hosting our first Sunday Lunch Club at 🥩👨‍🍳

Expect a delicious roast dinner with all the trimmings followed by a sumptuous seasonal pud!

The event is priced at £40pp and is a ‘bring your own bottle’ event! (We do have a range of non-alcoholic drinks and freshly ground coffee and tea available to purchase on the day.)

Due to the communal nature of the event regrettably we would suggest this is unsuitable for children under the age of 12.

Sitting times are 1pm and 3pm 💫

Depending on demand, we may add more dates and make this a regular event 🤞

Also, for all the foodies out there, I’m thinking of offering a monthly supper and food quiz night. The idea would be that you will have a three course seasonal dinner cooked by yours truly, followed by a food related quiz. You’d be in teams of two, with the winning team winning a prize, and it will be a bring your own bottle event. It sounds like fun to me but what do you guys think? Let me know if you’d be interested and if enough of you are, I’ll make it happen! 👨‍🍳

Had a fantastic belated 40th birthday dinner at .nottinghill over the weekend 🥂

The food and service was fantastic, but it was really all about the energy of the place, it was absolutely buzzing!

The highlight for me was the beef tartare with crispy potatoes, absolutely delicious and the bone in sirloin was cooked to perfection. 🥩

What’s your favourite topping? I’ve gone for something different this year as I had some bits kicking around from another dish… Yorkshire rhubarb crumble and custard pancakes and I can tell you it is delicious 🤤

Not so much cooking this week, I’ve had a week of reorganising (and turning 40!!!) 😬

It’s been nice to celebrate with my little family and now gearing up for my sold out Interactive Chef’s Table Experiences at this Friday and Saturday, as well as my sold out supper club at among (lots of!!!!) other things 😅

On the client’s chosen menu:

Smoked salmon blini, beluga caviar
Crispy Essex lamb, mint + capers puree
Truffle + mozzarella arancini, truffle mayo
Crispy halibut, tartare sauce, tarragon
Coronation chicken croustade, toasted almond

A real pleasure to cook at such a magnificent venue and bring the client’s very specific vision for the event to life!

Unfortunately I didn’t manage to get photos of the plated risotto or wellington as we were a little too busy ensuring they got to the guests hot and at their best to take pics! 😅
