We just love to receive feedback like this from a happy client! ✨

Last week we did a private dinner at luxury kitchen showroom in King’s Road, Chelsea demonstrating one of their ABSOLUTELY AMAZING kitchens in action to their clients. 👨‍🍳

It was a pleasure to cook in such a stunning kitchen and we are so pleased that they were happy with the service we provided 💫

Maldon smoked salmon blini, dill, creme fraiche
Venison turnover, plum sauce
Truffle & mozzarella arancini, truffle mayo, tarragon

Artisan sourdough, Maldon salted butter

Raviolo of lobster, shellfish-cognac bisque
(Shellfish allergy variation: gin cured chalk stream trout, fennel, apple, radish)

Braised beef cheek, cardamom glazed carrot, celeriac, red wine jus

Lemon tart, meringue, raspberry, mascarpone, toasted pine nut

British & French cheeses, artisan biscuits, chutney

The clients were a lovely group of foodies asking lots of questions and were a real pleasure to cook for 👨‍🍳

We didn’t manage to get photos of everything as particularly with the hot food our focus was on getting it to the guests while still hot!

On the menu…

Truffle & mozzarella arancini
Venison turnover, plum sauce
Coronation chicken croustade
Greek vegetable & olive croustade
Honey-mustard glazed baby sausage

Essex sourdough, Maldon salted butter

Gin cured chalk stream trout, fennel, apple, radish

Chicken, leek & mushroom pithivier, pommery mustard mash, Madeira sauce
(Variation for dairy intolerance: Roast Suffolk chicken, leeks, potato rosti, truffle-chicken nage)

On this Proper Pie Workshop we will be making steamed beef suet puddings, perfect for the cold dark nights! 🥧

The Christmas Pudding Workshop is a once a year class with only 10 places available. 24th November is ‘stir it up Sunday’ the traditional day to make your Christmas pudding for Christmas Day and that’s exactly what we will be doing! While your Christmas puds cook we will be making other festive treats including mince pies, mulled wine and cranberry sauce! 🍷

When you’re busy and time poor, often one of the first things to suffer is your diet, I know, I’ve been there myself!

It’s a vicious cycle as eating healthy, balanced meals are crucial to help you perform at the highest level, but you’re too busy to worry about your diet, so your performance could suffer!

This is where I come in! I offer in home freelance meal preparation, where I come to your home and prepare and stock your fridge or even freezer with delicious, healthy meals for the week or month!

As you know I love local, artisan products 🍯

Ian popped in on the off chance this afternoon to give me some of his raw honey to try which he produces in Wickham Bishops, a stone’s throw from near Maldon! 🐝

It is absolutely delicious, so delicious in fact that I have persuaded him to provide me with 20 jars to sell to my clients at the cookery school as well as at 💫

Look out for it next time you visit either venue as I don’t think it will hang around for long 👀

Throwing it back to 2004 when I was very lucky to be invited to this special dinner at (just look at the chefs’ names who cooked it!)
I spent the evening sat next to Christina and Neil Hamilton and was blown away by the food and the glamour of the event at just 19 years of age! 🤩

Fast forward 20 years, for my next Interactive Chef’s Table Experience on 24th October 2024 (10th October is sold out!) I thought it might be fun to recreate my version of the very menu I had on that memorable evening (minus the champagne!)👨‍🍳

Last nights oyster of the day 🦪

Grilled Maldon oyster Mornay… a beautiful Maldon oyster topped with a bechamel sauce finished with 36 month reserve cheese and Dijon mustard, then gratinated under a hot grill. 🧀

Oysters can divide opinion, but I can honestly say I have never had anyone in my restaurants or at my Chef’s table experience at say they didn’t like it once they’d tried it!

If you’re unsure about oysters, trying them cooked and served with a delicious sauce is a great way to ease yourself into them!

Throw back to last December when I had the absolute pleasure to cook privately for and guests at Kimberley’s family home! 👨‍🍳

It was for a festive get together and was a really enjoyable evening 🥂

As we are now in autumn is it acceptable to start to think about Christmas yet?? 😬

So here it is, the menu for the next Interactive Chef’s Table Experience at which is now live to book on Thursday 10th October 2024 at 7pm! 👀

CHEF School Of Cookery is located in the stunning Essex countryside between Maldon and Wickham Bishops, with ample parking on site 🌅

These events are proving very popular, as not only will you enjoy a seasonal seven course meal cooked before your eyes, but it is also a very social event where you will meet and chat with fellow diners as well as yours truly, with the opportunity to ask questions and pick up tips as your meal is cooked! 👨‍🍳

The Interactive Chef’s Table Experience is a bring your own bottle event, with no corkage charge 🍷

We have just released dates for the following:

Interactive Chef’s Table: £75pp (SOLD OUT)

Perfect Risotto Workshop: £50pp

Proper Pie Workshop: was £120pp/now £60pp

Intro To Fresh Pasta Class: £50pp

Thai Green Curry Workshop: £50pp

All our classes are suitable for all abilities, contain the perfect balance of expert demonstrations and hands-on cookery tuition and are not only great for learning new skills, gaining confidence and eating great food, but are also a great way to socialise and meet new people!

This could be my new favourite place 🤩

Whilst we were in Cornwall we discovered the most amazing little cafe nestled into the rocks right on the beach in Hayle 🏖️

It’s called and it’s really similar to my little place, in Maldon but with the added bonus of views to die for! ☕️

They serve great coffee, fantastic food with excellent service and a really cool vibe! If you’re ever in the area you must check it out 👨‍🍳
