Recipe 4: Onde Onde (Ondeh-Ondeh)

Onde Onde (Ondeh -Ondeh) is one of the most popular traditional Nyonya kuih (cakes) in Malaysia. This great favourite is also known as Kuih Buah Melaka. This version of Onde Onde makes softer Nyonya Onde Onde as mashed sweet potatoes is added into glutinous rice flour to make the dough before wrapping in palm sugar (gala Melaka) filling. They also stay soft the whole day without turning hard. That is of course, provided they are not gone by then. These Onde Onde are so good, you will realise you can never seem to make enough of these.

Recipe 3: Nyonya Chocken Curry

Chicken curry is made with bone-in chicken traditionally, and curry leaves are used to infuse the chicken curry with the intense fragrance of the curry leaves. Nyonya loves their chicken curry, or kari ayam in Malay. First of all, you just can’t beat the authentic great taste of a red-hot chicken curry. Secondly, no instant curry mix would rival the fresh and exotic aroma of homemade spice paste of turmeric, fennel, cumin, coriander seeds, and other aromatics.

Recipe 2: Kuih Dadar (Kuih Tayap)

Kuih Dadar or Kuih Tayap is a rolled crepe flavored with pandan juice and filled with grated coconut steeped in Melaka sugar or Malaysian palm sugar. Pandan leaf is the core ingredient of this kuih. The green exterior of kuih dadar is made of batter colored with natural pandan juice extracted from pandan leaves.

Nyonya kuih—or Nyonya sweet cakes—is a big part of Nyonya cuisine. In fact, Nyonya kuih is iconic, so much so that it outshines savory dishes. This kuih dadar/kuih tayap recipe is adapted from Nyonya Flavours: A Complete Guide to Penang Straits Chinese Cuisine.

Recipe 1: Nyonya noodles with Fish Broth (Assam Laksa)

Assam laksa, also spelled as Asam laksa, the piquant, pungent, sour, and fiery hot noodle dish with fresh vegetables bathed in a fish broth is a Penang Nyonya creation. Known simply as Laksa in Penang, it’s found almost everywhere in Penang–kopitiam (coffee shops), roadside stalls, mobile push carts, and hawker centers.

With perfect balance of tartness and spicy flavor, Assam laksa is uniquely Malaysian as there is nothing quite like it in the Southeast Asia region.
