Happy Birthday Shep!

Lauren planned an intimate dinner to celebrate her husband's birthday. The inspo for the menu was based on the couple's vacation in Positano Italy. A few special requests and some personalized twists on a few Southernish classics made for a unique line up of dishes.

The menu--

Appetizers: A duo of shared plates
1- Burrata bar- A top your own toast assortment served with oven roasted cherry tomatoes, romesco sauce, and basil pesto
2- Smoked Hamachi Crudo

Second:
Beet "Ravioli"- Beet Ravioli- thinly sliced and roasted beet rounds serve as the "pasta", herbed goat cheese center. Lightly dressed with a walnut vinaigrette, endive and watercress, and candied walnuts

Third:
Bucatini Vongole- House Extruded bucatini served with clams and, by request, mussel too, in a white wine, lemon, garlic, and thyme scented sauce topped with lemon zest and juice.

Fourth:
Chef's cut of beef with parsnip puree, confit radish, and pine nut salsa verde

Dessert:
Butter Cake Bananas Foster with rum caramel- a brown butter cake with sliced bananas, served with rum caramel sauce and mascarpone whipped cream.

Creating your own, very personalized menu, is just one of the many reasons to book Southernish for your Personal Chef driven events.

Chef Joe makes ALL of our pasta from scratch. That is right-- ALL of it.

Gluten free pasta from scratch? He's got it!
Extruded noodles from scratch (like bucatini and rigatoni)? You bet!
Stuffed pasta like ravioli or agnolotti? CHECK!
Rolled and stuffed pasta like a lasagna rotolo- Yes sir!

Using flour from crops grown, harvested and milled locally that is fresh and stoneground takes our pasta even one more level up!

A comforting bowl of fall pasta? Coming right up!

Not really a new dish to us, just one that FINALLY got it's own photo. Enter Squash Ravioli in Brown Butter!

A combo of roasted butternut and delicata squash, mixed with ricotta and some savory nutmeg, garlic, thyme, rosemary, and sage makes up the filling. Served in brown butter infused with more sage and topped with Parmigiano Reggiano cheese and some amaretti cookie dust.

The perfect third course through fall and winter too!

To Surprise or not to surprise?

The ultimate question for many when it comes to planning a special celebration for a loved one.

We often get asked our opinions on how a Southernish meal fits into the picture when it comes to a surprise experience.

A few considerations:

- Would your loved one prefer to be involved in working with a Chef to create their perfect meal? For some culinary obsessed folks the experience of collaborating in the planning process alone would feel like a gift. In this case a gift certificate can be a great option, or even a date secured and paid for, but allowing them input into the menu is the way to go.
- Does the person you are planning for spend loads of time planning and coordinating for others and feel a touch overwhelmed when it comes to doing things for themselves? In that case a surprise where its all handled for them may be the way to go.
- Will you be able to get the recipient of the surprise out of the house if its hosted in their home? If not, consider making just the Chef coming and the meal a surprise. For example, maybe the recipient thinks friends or family are coming over to celebrate and y'all will order takeout. Have the recipient answer the door thinking they are greeting a delivery person, only to find Che Joe at the door!

We love helping y'all plan some amazing events, each and every is unique which is a part of what we love about our service!

What do you think, would you want a surprise where its all planned out for you, or would you want to collaborate and plan with the Chef yourself?

Our menus are fully customizable, and we work with all allergies and dining restrictions. Wondering then-- how do you a select a menu for your dinner?

A few considerations we ask of our clients prior to their menu planning consultation phone call with the chef:

1- Are there any allergies or dining restrictions for those you anticipate being in attendance?
2- Are there any strong preferences about foods that you wish to plan around (ex- the individual who is being honored at the dinner dislikes Brussel sprouts, or the couple hosting the meal love crab.)
3- Are there certain cuisines that you feel would be a good fit for the menu and the occasion ? (ex- Southern, Italian, Spanish, Tex-Mex, an eclectic mix, chef's choice?)
4- Are there any dishes you have seen on our social media/ website that were of particular interest to you?
5- For desserts, do you imagine a chocolate based dish or something fruit forward?
6- Are there any special requests for a dish or specific food that you would like Chef Joe to consider while planning your menu?

All that being said, some clients simply request the Chef present his best or his favorites- and hey, we won't argue with that!
