No, if an officiant did not sign your marriage license, you are not legally married in Louisiana.
When are you legally married?
A couple is legally married when they, their witnesses and the wedding officiant (the minister, preacher, priest, rabbi, justice of the peace, etc) sign the license, whether that is before or after the ceremony. The ceremony is just that, a ceremony. It has nothing to do with the legality of the marriage.
What to do with the marriage license after you’re officially married?
Once the marriage license is executed (signed by all parties), you are officially married and you have 10 days to return the marriage license to the clerk of court office that issued it to you.
