WATCH THAT NEW STAFF!

There was this time we were contracted to cater for a wedding. The guests were about 900, the mother of the groom who contracted us decided to give the catering job to 3 caterers and we were one of them.

I was to handle the supply of 45 servers...15 to each caterer. I was also to handle the rental of 900 plates, 900 sets of cutlery and 600 water glasses, so that we can have uniform plates, cutlery and glasses. All this we handled well.

We came with enough beef, chicken and fish to serve our own 300 guests. We started with fish and chicken that will serve 200 guests.

Then it was time to serve the beef, and we could not find the beef. A bag containing 200 peices of peppered beef, Abasi mbok!

Searched everywhere, opened coolers, and guests were waiting, it was going to be a monumental embarrassment!

If I did not put the beef away under the service table myself when i were setting up, I would have thought maybe we forgot the bag at home in our frenzy to meet up with the time!!

Everyone denied even sighting the bag of beef. Someone even swore that we left it at home! Home keh? Me that handled the tucking away of the bag under the service table personally!

Suddenly, one of my girls suggested we check everyone's bag. Everybody bring out your napsack, operation search all bags!

Some people started saying that they have never stolen since their mother gave birth to them 😂 I was not listening, bags we must search!

Low and behold, we found the missing beef bag inside the napsack of one of the servers, and the most annoying thing is that, that was his first time of serving with us! A bag containing 200 pieces of beef, haba?

Chai! I was livid! But I had to finish wetin carry me come wedding first. So I asked him not to serve but wait for us.

When we were done serving, I told him that he was lucky as his brother who brought him had worked with me for many years and had never stolen, but I will not pay him any money and that he should go home. The irony of the whole thing is that he was so hardworking and very innocent looking oooo!

His brother was embarrassed and apologised profusely. I then decided that no server will follow me for any event with any bag. Come with just your handset and a purse if need be!

God helped us that day ooo, if not premium embarrassment.

Two years ago, a highly respected client of mine reached out to me for a catering service for an important event.

I was happy cos I don broke, everywhere dry pa!

She asked for the cost for the service, T&C etc.

Quickly, I sent her our prepared price list of various menus etc.

She made her choice and ask that I send her the total bill for 600 guests!

Come and see dancing. Konkoma was in order.

I did some adjustment due to the number of guests, made some discounts and send her my final bill.

She sent back a rejoinder that the bill was too high..( note: she is capable of paying higher ooo)

I tried to explain to her the cost of material, labour, etc, I even told her to look properly at the initial costing I sent to her, that she will see that I had given her a discount of 15%.

I had to lower my profit margin to do this I explained.

While discussing back and forth, she asked me what my profit percentage per job was, note brethren, I was eager to get this job as money scarce, everywhere dry...

That is how una sister open her mouth and told her my profit percentage. Chimo! Na so madam calculate fast, fast to arrive at my actual profit in Naira ooo..

Madam para premium, I tell you, why will I be making that amount of profit, untop what, etc...

Chai, watin lack of money go do...

I told her that the work is much and that my colleagues in the industry are collecting higher ooo, I sent her pages of colleagues whose services were not even as good as mine and the monstrous cost per plate.....

I told her nit to be angry and that I can't give below that price. I felt really st.upi.d for telling her how much I was going to earn!

We closed on that note, the following day, she sent a text that she will be paying the money into my account. Apparently, her husband spoke to her the night before.

We did the job and it was fantastic!

Lesson learnt, never be so vulnerable to the point you expose your trade secrete to a client!
