‘Tis the season for nibbles, and a good grazing table is all about layering and combining different flavours, textures and colours. Salty enhances sweet. Creamy and crisp are a tango of textures. And umami makes everything pop.

Forget paint by numbers, we paint by veg!

We love adding vibrant splashes of colour to our dishes with the yellow, red and candy-striped heritage beetroots from Day's Walk Farm and Mossy Willow Farm.

Better still, we love mixing these beets together and creating new colour combinations — it’s like painting with watercolours!

Turn your own beet around on Christmas Day. Heirloom beetroot, greens and smoked labne salad is on our Christmas Menu.

SLOW is about Seasonal, Local, Organic, Whole food, but it's also a call to slow down and savour all the flavours, aromas and textures that food has to offer.

So, when we create a buffet — like this recent lunch for Table’s friends and supporters — we don’t make a bland one-note menu.

We create a mosaic of different colours, flavours and textures that invite guests to taste their way through the buffet, returning again and again to try more.

Exploring innovative strategies to reduce the carbon footprint of the building industry is hungry work.

Good thing we were there to nourish attendees at the International Conference on Decarbonising The Building Industry (DBI).

Nothing says spring like asparagus. This versatile veg recently crowned our tartes d’amande et miso , and shared its sweet crispness in platters .table.

At SLOW, we focus on seasonal and local produce, so over the next few weeks we’re preparing to bid a fond adieu to this beloved green spear. But never fear, this perennial veg will be back — and back and back.

Once established, asparagus can produce for up to 20 years and needs no tilling or replanting. Like all perennials, this helps maintain soil cover, structure and health.

We recently catered for the 10th anniversary of at Abbotsford Convent. This preventative mental health and emotional literacy charity is empowering boys to become brave men – bravely vulnerable, bravely kind, bravely human.

We love it when our food not only nourishes our clients’ bodies but also the minds and hearts of people doing good in the world. It makes us feel part of solutions for a kinder and more equitable world.

5 years ago, during lockdown, a Japanese chef I'd worked with briefly at Lentil as Anything messaged me asking if she could volunteer at SLOW to help make some home-delivered meals. After a few short shifts immediately offered her a position knowing I'd found someone special.

The past few years working with the sweetest and most talented Michiyo has been nothing short of magical. This incredible woman became the heart and soul of the SLOW kitchen. Her dedication to literal perfection in every dish she serves and commitment to the customers experience is inspiring. Neither me my business would be the same without her influence, care and kind words

Unfortunately has to move on in order to achieve her long term goals of staying in Australia and we all wish her the absolute best.

You will be so so missed from the kitchen and from our daily lives.
