Mrs Always Right is in for a treat with these wonderful Spanish tomatoes from the French Market 😆😋 recipe below:
Serves 2
2 vine tomatoes
100g pitted green olives
1 clove of garlic
2 tablespoons olive oil
Parmesan
Zest of 1/2 a lemon
1 tablespoon balsamic vinegar
Fresh flat leaf parsley
Method
Remove the eye of the tomato with a sharp pointed knife.
Slice 2/3rds of the way through the tomato (I put a chopstick either side to prevent cutting right through)
Chop the olives, parsley and garlic together. Mix with the zest, olive oil and a twist of salt & pepper.
Fill between the tomato slices, drizzle with balsamic and shavings of Parmesan.

Having a dinner party with great friends and appreciating the grub 😋 cream of Jersey watercress soup (thanks Anna) with poached egg, crispy pancetta, sourdough & Parmesan. Duck leg confit, pithivier, Jersey asparagus, mustard mash & port sauce. Vanilla panna cotta, rum soaked pineapple, dark chocolate brownie, yuzu, passion fruit & granola. Oh an Amuse bouche of Chilled tomato & Kimchi consommé, orzo & basil. 👌 B.E. Caterers
