22lb spatchcocked bird brined overnight in Matt Pittman - Meat Church] Bird Baptism. Seasoned heavily with Matt Pittman - Meat Church] Deez Nuts Honey Pecan rub and smoked with Pecan wood on the XD offset at 275° for 2-2.5 hours and finished at 350° to help crisp up the skin.

Been using my homemade rub for awhile doing different experiments. These ribs were smoked a few weeks ago. No wrap for the entire cook except for the resting period. Smoked low and slow with a mixture of oak and cherry splits.

Super simple rib smoke today…Texas Style. No wrap, just salt, pepper, and . Wrapped in foil and sauce to rest after 5-5....

Super simple rib smoke today…Texas Style. No wrap, just salt, pepper, and . Wrapped in foil and sauce to rest after 5-5.5 hours on the pit. Ran red oak at 250-275° for the whole cook unwrapped.

After using the foil boat method, I rested for 10 hours in the oven on low. Turned out better than I had anticipated. The red oak gave it a nice smokey flavor that was definitely different than the last brisket.
