It's been a while since I shared any recipes and to be honest, I really don't cook much by recipe! I find it redundant to write out a recipe that exists in 100 different forms or are just on repeat. Yet here we are lol.

Quick recap of my method, although I'm sure you can figure it out on your own or google some other cool chef's recipe.

Sauté chopped onions, carrots celery in olive oil. Grate in some garlic, sprinkle of dried basil and oregano. Add diced tomatoes (I buzzed them up for less chunks, I have kids!) and two cans of water. Bring to a boil, add cubed potatoes, meatballs if using, all the beans, (I also added some leftover corn and some frozen peas). Throw in a parm rind if you have! If you don't, it will taste good still. Just not as good.

Simmer for at least 30mins, or longer if you need to power nap or fold laundry, stirring occasionally. I like to boil pasta separately instead of fishing for it at the bottom for one of my kids and trying to dodge all the vegetables they don't like! Season the soup and serve with cooked pasta and extra parm!
