It's been a while since I shared any recipes and to be honest, I really don't cook much by recipe! I find it redundant to write out a recipe that exists in 100 different forms or are just on repeat. Yet here we are lol.

Quick recap of my method, although I'm sure you can figure it out on your own or google some other cool chef's recipe.

Sauté chopped onions, carrots celery in olive oil. Grate in some garlic, sprinkle of dried basil and oregano. Add diced tomatoes (I buzzed them up for less chunks, I have kids!) and two cans of water. Bring to a boil, add cubed potatoes, meatballs if using, all the beans, (I also added some leftover corn and some frozen peas). Throw in a parm rind if you have! If you don't, it will taste good still. Just not as good.

Simmer for at least 30mins, or longer if you need to power nap or fold laundry, stirring occasionally. I like to boil pasta separately instead of fishing for it at the bottom for one of my kids and trying to dodge all the vegetables they don't like! Season the soup and serve with cooked pasta and extra parm!

No, it's not authentic minestrone.

It's been awhile...

Honey Cilantro Lime Salmon with curry spiced jasmine rice and sautéed cabbage and beansprouts!

Chopped cilantro, green onions, honey, garlic, lime zest and juice all come together perfectly for this Coho salmon!

Jasmine rice gets a glow up with sautéed onions, curry powder, ground cardamom, crushed saffron, and cayenne for heat!

Make sure to reserve some sauce for drizzling on your rice! 👌🏻

Ice Storm 2023 celebrated with a bowl of curry carrot coconut soup! Warm curry spices and fresh grated ginger are perfect for a day of freezing rain!

Sauté one medium onion in olive oil until translucent. Add a couple of dashes of your favourite curry powder, ground cardamom and a pinch of saffron (optional) and cook for 2mins. Stir in carrot chunks (approx 2lbs) and cook for a few minutes. Add one box of chicken broth (900ml) and/or water until 1 inch above carrots. Bring to a boil. Lower heat and simmer until carrots are soft. Buzz with immersion blender. Add fresh grated ginger, and one can of coconut milk. Adjust consistency to your liking and season as needed.

Serve with garnishes! I used green onions, toasted sesame and a dash of Epicure Bali Glow.

It's been a while since I've posted! Life has been busy! Thankfully, we've been able to make use of our Griddler to make quicker meals! I rarely buy countertop appliances because I've always lacked countertop space. This was a gift from my MIL, and I really like keeping it out!

I've been trying to navigate some digestive issues lately, and noticed that I had less issues with eggyolks whenever I ate toast with it. Today is a bit of a test to see if avocado helps this bacon brie omelette stay happy in my belly. I didn't quite think this through as an actual test since the brie might be a culprit too. Either way, I really do like understanding how foods affect the body, and without going into nutritionist mode, I've noticed a few trouble areas for myself.

1) I can't eat salad alone. If I don't eat something carby with my salad, it will shoot through my body almost instantly. My guess is the high fibre in a salad. How does one benefit from the nutrients in a salad if it doesn't stay in your body long enough to be absorbed?

2) I can't eat whole eggs alone. Another issue which requires toast to be digestive friendly. Egg yolks hold plenty of nutrients in them, but how do you absorb these if they ravage through your system almost instantaneously?

So, for me personally, I realized I need to eat a balanced meal that always includes a portion of carbs/starch to help stabilize the effects of other foods and help absorb key nutrients.

I really think we need to see how food affects our personal bodies and stop following cookie cutter diet trends that can wreak havoc on your body before it does any good.

Brioche French Toast Muffins!

Saw this idea floating around and decided to give it a try with some frozen brioche buns!

My kids (like most) have a tendency of getting tired of something they were previously fans of, and these buns were one of those things and close to expiry. I threw them in the freezer with hopes of repurposing them into something fabulous!

Well this sure worked out, didn't it?!

I defrosted them enough to cut into cubes, made an egg mixture of whole eggs, milk, vanilla extract, cinnamon and a touch of nutmeg! Mixed in the brioche cubes, piled into a well greased muffin pan, extra sprinkle of cinnamon and baked at 350F for 20mins.

Served with baked bacon and extra maple syrup! Next time, I'm mixing the bacon into the mix for a sweet 'n' savoury brunch!

As you can see, I had avocado, dill, kalamata olives, cherry tomatoes, spinach, feta and chicken breast! Dressed lightly with olive oil, salt pepper and a half a squeezed lemon!

The Grecotalian Summer Salad in November!

Don't ask! I just threw what I had in the fridge into this salad! It started out as a Greek green salad, and then I added truffle salami, Bellavitano Balsamic shavings, then added green onions and blueberries for summer freshness! 🤷🏻‍♀️

Today's bitter cold weather made me miss summer so much! I thought back to when we drove to Sutton, QC and ate tacos at Sugaree Farm on a hot, sweltering day! I channeled their delicious double decker taco tonight to the best of my ability, and it was close enough! Cannot wait to go back in warmer weather!

A quick frijoles recipe of canned black beans, taco seasoning, and a touch of water really gave this taco weight! Cheddar, chicken and some greens tossed in caesar (I didn't have anythg ranchy!) on a pan fried soft tortilla shell! 👌🏻
