BTS from our .pa.in supper club last week. Thank you to everyone who joined the fam this month, it really feels like we’re building a little community. LISTEN OUT!

Our friends over at came and told us the exciting news… the roof is coming down!

On 13th May to be exact. You know that that means? It means summer is right around the corner, along with the sunshine and good times ☀️ . And we think the best compliment for good weather is our family recipe Pad Thai, maybe some crispy squid and who knows maybe a new dish or two… 😜

LOY KRATHONG 🕯️🪷

Today marks the celebration of Loy Krathong in Thailand. Our family grew up in the UK and would usually only spend time in Thailand over the summer holidays. This meant we’d never really celebrated it properly. A few years ago I to visited over the winter, and Yaa (grandma) was excited to show me what it was all about. In the morning we went out to pick Bannana leaves and spent the day creating little floating baskets which we would decorate with flowers and light candles on to release into a nearby pond. Of course we also prepared a big meal for friends and neighbours to enjoy. We ate, drunk, sung and danced into the early hours of the morning. Me and my friend who were just teenagers at the time often reminisce about how much fun this night was. My grandma wrestled her friends into the water! It went on so late most her friends ended up sleeping on the kitchen floor!

I still don’t fully understand what the festival is about and want to learn more about it. Looking at pictures they look like they can be more grand and extravagant, but I really loved mine. I imagine for Thais it’s a bit like Christmas, a day they cherish and look forward to being able to spend with their loved ones each year ❤️

Currently we’re getting stuck in to bringing you a fresh line up of bangers for you to tuck into in the colder winter months. We’ve done our best to make these as close to the steaming bowls of goodness you’d find on the corner of streets in Bangkok. Some people are going to cry about the weather being too hot for noodle soup. We reckon the heatwave is going to make the whole experience even more Thai.

“Kapi” is Thai fermented shrimp paste. You prepare it by leaving a shrimp-salt mixture out to dry and ferment over several days. Kapi is an essential but subtle ingredient in some dishes we cook, and essential but completely unsubtle in others. Whenever we complain to dad about using it to cook with at home, he becomes exasperated and just asks for us to wait until he starts frying it. It’s true that the smell of kapi drastically improves once fried. The shell matter becomes sweet and smoky when it’s toasted which generally masks the rotting fish smell.

But even when not fried, admittedly shrimp paste tastes a lot better than it smells. It’s possibly one of the most umami things I’ve tried; if you’ve ever dared to eat Nam Prik Kapi, a spicy vegetable dip with raw shrimp paste, then you’ll know what I mean (and have reached Thai food eating level 💯). Gaeng Som is a sour fish curry characterised by its use of kapi as well, but here the shrimp paste is boiled rather than fried as part of the cooking process. There’s nothing sweet and smoky about this smell. Walking through the city in the early morning, you might come across some Gaeng Som wafting through the air vents of a possible shopping mall, hotel or restaurant - that will be the workers trying to cook their lunchtime Gaeng Som at a discreet time. It honestly smells something like old socks - and that’s thanks to the kapi. In Thailand I’ve heard kapi go by a much ruder slang name. I won’t write it here, but maybe you can guess what it is!

It does get pretty tempting to start buying them in, but we think taking the time to make them fresh is worth it in the end. We keep these simple but remember you can make these with pretty much any filling you want so go wild!
