Recently, I've seen social posts with orzo and Boursin cheese. The basics are orzo, Boursin cheese, sun dried tomatoes and chicken stock. However, the finished products I've seen have looked really dry. I took this Boursin-Orzo trend and made it my own - One Pot Creamy Orzo with Chicken and Sausage. Yield 4-6 servings
1 lb. Bulk sausage, hot or mild
1 lb. Boneless, skinless chicken, cut into 1" chunks (I like thighs)
1/2 lb. Orzo pasta
1 small shallot, small dice
2 TBS. Sundried tomato paste
1 QT Chicken stock
1 box Boursin cheese with Garlic & Fine Herbs
10 oz. Baby spinach
10 oz. Broccoli florets, frozen
1/2 cup Parmesan, grated
1. In a large pot or dutch oven, brown the sausage. Remove from the pan. Sear the chicken chunks in the sausage drippings. Remove the chicken from the pan.
2. Saute the shallots and sundried tomato paste.
3. Add the orzo and stir to coat with drippings. Add sausage, chicken and Boursin to the pan. Stir to combine.
4. Add the chicken stock and stir to combine. Bring to a boil, reduce to a simmer. Cover the pan ajar to let some steam escape. Simmer for 15 minutes until orzo is tender.
5. Add spinach and broccoli. Let simmer for another 10 minutes until the vegetables are tender.
6. Finish with grated Parmesan and season with salt & pepper to taste.

Hard to believe these 2 dishes share an ingredient...zucchini:). I scooped out the innards of the zucchini to make these delicious chicken enchilada zucchini boats and then used those innards to make double chocolate zucchini bread...dinner with dessert😜
