This arabic bread is a hit🤩
So simple to make, very economical, no chemicals, no yeast and SOO delicious😋.
In Algeria, we call it Kesra, usually it is made with semolina but at home I use what I have in my cabinets and in this case I made it with flour.
I remember my friends' mums used to made this every Sunday. I always made sure I was around at snack time (4pm) to have a taste of a just baked hot kesra with honey and butter toppings🥞 Yum!!
Today I want to share this very easy recipe with you🤗
- In a pot, put 2 cups of flour, 2 tbs of olive oil, 1 tsp of salt, stir, add some warm water, knead for 20 seconds, make balls
- Get a sauce pan, medium/high heat, flatten a ball between your hands, cook it on the pan, ET VOILA!

What Christmas means to you?
Appart from the religious meaning, Christmas is all about spending (more) time with your loved ones, offer gifts, do a good deed, bake and offer cookies, meet your neighbors.
I didn't grow up with the religious aspect of Christmas, we didn't have a Christmas tree and we as a family were always together, hanging out every Sunday.
Yet I used to cherish this period of the year. With my sisters we enjoyed the cold evenings, sipping a cup of coco in front of a Christmas movie. This sounds cliché (like in the movies, right?!) but it was a bonding time for us, watching and chatting about anything and everything.

Who here have tasted some Alfajores before? 🙋♀️
Those tasty, melting shortbread biscuit filled with some Dulce de Leche and rolled in desiccated coconut?
A friend of mine made me discovered those cookies. One day at work I have brought some North African pastries and this Algerian shortbread filled with raspberry jam (see photo).
Ana Hernandez, Ana, my friend loved them and she said “omg they remind me the cookies we used to eat when we were young, in Argentina”. Ana is Argentinian, moved to Spain with her family when she was 15 and we met a few years later when she was living in Paris.
I asked her about the recipe of her cookies, I was curious. Even though the 2 cookies ingredients were different, the taste was quite similar.
Anyway, I have made Alfajores and fell in love with those delicious, melting cookies.
A piece of heaven. 😇

Yesterday I was watching this video from . He is currently doing an amazing trip around North Africa and he was travelling throughout Algeria.
Oran! This is where I have spent a significant part of my childhood. I was born in Mostaganem, moved a few times until Ein El Turc which is nearby Oran. I was watching this place and tried hard to remember any of it. It felt weird to watch a city (I thought) I knew, and yet it was new to me. OK I was little, OK we moved to France when I was not even 7 years old, but still! In my head I thought I remembered a lot of that time. Maybe my memories were more about how it was to live there as a little girl, my house, my bedroom, my friends, yummy crepes (baghrir) my grandma used to make and less about the city. Therefore, I enjoyed watching that video, it made me sob a little and made me wish we will one day backpack and travel in my birth country with the family I chose and started ❤️

Once upon a time, I was invited to Leila’s place, my childhood’s friend, to have a family lunch.
Her mum used to cook the most amazing Algerian dishes, chicken and olives tajines, lamb and almonds, vegie boureks, harira soup, bread and of course gazelles horns.
OMG that day my belly and I were the most happy in the world. Her kindness and love for cooking was very inspiring.
Back home the story was much different, there, if my younger sisters and I wanted to eat WE had to cook. Our single mum loathed cooking. It got me thinking, I too want to be able to make delicious food for people I love. Looking at someone’s face illuminating, feeling full and content. At that time, I was thirteen years old and internet or mobile phone were not in the market yet.
For some reason I was ashamed to ask Leila’s mum to teach me how to bake.
A few days later, I was hanging out with my friend Sujud and we were talking about food and about how I would love to try and make traditional recipes. At that moment she went to the kitchen and came back with her mum’s recipes book from an Algerian author.
So many recipes from starters to desserts, breads, sirups and teas were even in the book. My eyes popped and I wrote down all the recipes I wanted to try at home.
That weekend I spent hours baking gazelles horns, it was so difficult as I never saw how to do and trust me, there is a technique. but with good thinking and resilience I finally made a delightful batch.

Those fine cookies originally come from Maghreb (North Africa).
At Noria Patisserie we make the traditional "Gazelles Horns" from Algeria where we call them "Tcharek Msakor" (translation: sweet croissant). "Gazelles Horns" is the translation from French where we call it “Cornes de Gazelles”
This cookie is made with flour based thin pastry, a rich almond and blossom water filling, and covered with icing sugar. Because of the pricey ingredients (Almond, Blossom water) and long time to make them (approx. 3h for 1kg) those cookies are traditionally served for great occasions like weddings and usually with a glass of hot mint tea. YUM!!😋

From the age of 13, I used to bake every year kgs of traditional north african pastries towards Eid-El-Fitr, for my family. Eager to discover cultures by food and especially sweet treats, I have been enjoying baking delicious treats from all over the world, ever since.
My friends have been asking me for years to start a baking business and today I am finally ready to do so.
Hi my name is Noria, Algerian born, raised in France (Paris). In 2016 we were backpacking in NZ with my partner and fell in love with this country. We have now made Auckland our home and have a baby girl, Sofia.
Baking is like a therapy for me, put some music on, dance a little and bake for your delight.
A smile and a “yum” from someone who taste my pastries is the best compliment on earth.
