Planning your holiday meal? Consider a twist on tradition. Like instead of making a whole turkey, break down the turkey and offer it in different ways. But use this approach for whatever you are making. Remember, we first eat with our eyes and nose.

So for this past thanks giving. I made a turkey breast with a rosemary and garlic infused butter for a traditional American flavor. It was served with wild rice, and Brussel sprouts which were roasted with tangerines, figs, and sweet onions and drizzled with balsamic vinegar. I also added some sliced squash which I made flowers of and lightly coated with panko bread crumbs before deep frying.
The other side of the breast, I butterflied and pounded it out. I seasoned it with traditional Spanish herbs, rolled it up with spinach and cream cheese and wrapped it all in bacon, for a Spanish flavor profile. Served it with Mariquitas (thinly sliced long plantain chips), Tostones, (Double fried green plantains), and Mangu (Mashed plantains). Cut my cooking time to 1hr and made for a great tantalizing spread.

AGING OUT; that's the term used for foster kids who turn 18 and leave the system. What happens to this kids when they are sent out into society with no family and no social net? Think about that.
This is why I lend my talents and my time to fundraise to give these kids a fighting chance.

To say Covid messed up a lot of plans in 2020 would be the understatement of the year. But our hunger for the things that make us who we are should never change.
For me. that passion is for helping young adults transition out of the foster care system, and I'm just itching to get back to it.

we strive to give back to the community any way we can. So for Veterans Day, we hosted a free sidewalk cookout. We served our signature BF&F Mussels & Arroz con pollo (chicken with rice). We had an amazing turnout and were able to interact with our local neighbors and hear their stories.

We have here is our Chicken Wing Spaghetti. Yes, you read that correctly. Chicken Wing Spaghetti which has sautéed chicken wings tossed in garlic oil pesto pasta served with tomato and basil sauce. You can’t get these anywhere so you definitely want to try this out!

Our BF&F (Best Friends & Family) Mussels is just one of the signature dishes we are showcasing at the 32nd Annual Sponge Docks Seafood Festival in Tarpon Springs, Fl. It’s our signature dish with fresh Mussels tossed into a creamy white wine reduction sauce, topped off with sautéed onions, bacon, spinach and blue cheese. I love to cook. It was my mother's love language. We grew up in the ghetto, but you wouldn't have known it from our dinner table. It was sometimes fancy, but mostly it was always creative and varied. As an adult, I value ethnic cooking. "Cabinet" meals, meaning we are using whatever is in the cabinet and that is it. Why? Cause when life gives you lemons you make the best lemonade there ever was. Ethnic cooking reminds us of our history and opens a window into why we cook this way, and why we wouldn't ever change it.
It takes creativity and planning to make a meal stand out when you can't just go buy a bunch of ingredients you cant even pronounce, but in the end, the love you put into your meal shines through each and everytime.

Helping people or just planning to help people is an awesome feeling. When you put yourself aside to help others, it just feels right. But this weekend at the Taste of Latino Food, Art, Wine, and Music Festival in Tampa I was most excited to see both my kids supporting me. Ever since I told them of the idea they’ve been nothing but supportive. For my birthday in September, my son Justin gave me a planner and pen engraved with Frankie’s for the kids catering. I liked it so much that I scrapped the text on the logo we had designed and replaced it with his. My daughter BRYANNA knew I wanted a 2nd Paella pan, jacked my Amazon account to see which one and bought it for me. And when I told them about the event, they both got the day off at work to come and support my dream. You just can’t beat that feeling folks.
