This week we are working at a fabulous mountainside villa in Puerto Pollensa catering for a group of colleagues on a work trip. Each morning we'll be serving a continental breakfast and preparing a light lunch. For today's lunch we prepared a selection of sandwiches including Chinese five spice stir fried vegetable wraps with sweet chilli sauce and rustic buns filled with mozzarella, tomato, pesto mayonnaise and rocket.

Quinoa, griddled peach and avocado salad with fresh mint and basil and a lime dressing, teriyaki beef skewers and oven roasted vegetables. We served another selection of dishes from our 'Al-Fresco' menu yesterday evening.

A 3 course 'Dinner Party' menu for this week's clients. Moroccan 'Ras-el-Hanout' chicken, red pepper and date skewers, served with raita sauce to start followed by slow cooked Spanish pork, chorizo and white beans, served with roast 'Sa Pobla' potatoes and seasonal vegetables. We served our popular chilled lemon creams with ginger biscuit base, topped with fruit coulis and fresh raspberries for dessert.

For the next week we'll be serving evening meals at a luxury villa in Puerto Pollensa. Our client opted for a selection of dishes from our 'Al-Fresco' menu for the group's first meal yesterday. We prepared teriyaki chicken skewers and ​fish goujons in sesame seed breadcrumbs served on shredded spinach with soy and sweet chilli sauce. We served a pan-fried goat's cheese salad with walnuts and a balsamic dressing, a tomato and mozzarella salad and oven roasted vegetables. For dessert we baked our delicious warm apple, walnut and cinnamon cake for the birthday occasion.

It's been another busy week for us. Tapas, dinner parties and birthday celebrations. Yesterday's client and her family enjoyed one of our 3 course menus. To start we served an amuse-bouche, roasted figs stuffed with goat's cheese and drizzled with honey, followed by tomato and mozzarella salads with pistachio pesto crumb, rocket and a balsamic dressing. For the main we served pork fillet wrapped in serrano ham with 'Pedro Ximinez' sherry sauce, served with sautéed shredded cabbage and dauphinoise potatoes. For the vegetarian in the party we prepared roasted aubergine stuffed with mixed peppers, feta cheese and black olives served with couscous and roasted vine tomatoes. For dessert we served our delicious warm apple, walnut and cinnamon cake served with vanilla ice-cream.

'Caroline & Paul were absolutely wonderful, super friendly and warm from start to finish. The two paellas they prepared were outstanding, cooked to perfection and full of flavor. A special extra star goes to the lamb paella, truly exceptional! Highly recommended.'

Lunch with a view! Yesterday we cooked for a regular client and his colleagues at their fabulous holiday villa in Costa d'en Blanes. To start we served two sharing platters followed by a meat paella with lamb and chicken and a seafood paella with merluza, squid, mussels and prawns. We prepared our refreshing chilled lemon creams for dessert.

A selection of tapas for yesterday's client and her friends. Among the dishes we served baba ganoush, crudités and pitta bread, garlic mushrooms with pistachio pesto crumb​ and tempura calamari with homemade alioli. We served fish goujons in sesame seed breadcrumbs with shredded spinach and a soy and sweet chilli sauce and garlic prawns. To accompany the meal we prepared our delicious white wine sangria with peach schnapps and supplied the party with a choice of wines from local vineyards.

We cooked this week's client and her family their final meal of their holiday yesterday evening. To start we served an amuse-bouche, crostini topped with melted goat's cheese, blueberry jelly and walnuts followed by Moroccan 'Ras-el-Hanout' chicken, red pepper and date skewers, served with raita sauce. For the main we cooked pork fillet wrapped in serrano ham with 'Pedro Ximinez' sherry sauce, served with sautéed shredded cabbage and dauphinoise potatoes. Our chocolate prosecco truffle cups were the perfect dessert.

This week we're serving breakfast and evening meals at one of our favourite Pollenca properties, Balearic Villas beautiful 'Villa Antigua'. We prepared a continental breakfast this morning, serving a selection of croissants, pastries, breads and bagels. We served smoked salmon, cream cheese and avocado and prepared a fresh fruit platter served with granola, cereals, yoghurt, dried fruits and nuts, honey and fruit preserves.
