Family Meal Sunday: Pasta (my comfort food)

This is my take on the viral feta pasta. Olive oil, cherry tomatoes, block of feta cheese, minced garlic, oregano, salt & pepper. Nothing fancy, just homey. Pair it up with some homemade roasted garlic and Italian accompaniments.

Family Meal Sunday - Today’s menu features white chicken chili. Yum!
Family story on this one - A family member asked for this recipe for chili cook-off at his work. He ended up winning 1st place! 🥇 When he makes it now, it’s “1st Place Chili.” When I make it, it’s “2nd Place Chili.” 😆
Here’s today’s recipe with a little twist:
• 4 chicken breasts
• 1 can each of corn, black beans & Rotel (all not drained)
• 1 can green enchilada sauce (twist)
• 1/2 tube of cooked chorizo (twist)
• Cumin, garlic powder, paprika, chili powder, salt & pepper (I never measure, I eyeball it all 👀)
• 1 block of cream cheese
• Favorite toppings & chips
