As we get back into school, remember that healthy after-school snacks are just as important as a healthy meal! Here are some quick and easy suggestions for you:

Fresh fruit: Cut up apples, grapes, berries, or bananas. Dip them in a little bit of nut butter.

Yogurt: Pick a yogurt that doesn't have too much sugar or try Greek yogurt. Add some fresh fruits or a bit of granola for a tasty crunch. If you need a little sweetness, try a drizzle of honey!

Veggie sticks: Eat carrot sticks, cucumber slices, or bell pepper strips with a dip made from hummus or yogurt.

Cheese and whole grain crackers: Choose natural cheese slices or cubes. Eat them with whole grain or whole wheat crackers.

If you need something super-easy and kid-friendly to pull together for holiday parties, thank yous, or anytime you need treats this season, White Chocolate Cranberry fudge fits the bill across the board! Smooth and decadent punctuated with the sweet/tart taste of dried cranberries, this one is delicious for both the eyes and palate! With supervision, your kids can help mix and pour the fudge, or you could let them sprinkle the cranberries into the mix (just remember they have to be added quickly)! It's also soft enough after cooling to cut with a sturdy plastic knife.

Easy White Chocolate Cranberry Fudge

Ingredients

3 3/4 cups (24oz) white chocolate chips
14 oz can sweetened condensed milk
1 tsp vanilla extract
6 oz (1 1/4 cups) dried cranberries
Pinch of salt
Sparkling sugar sprinkles

Instructions
1. Line a 9ร—9 square pan with parchment paper that covers the sides of the pan.
2. Place the white chocolate chips and sweetened condensed milk in a large bowl and microwave for one minute. Stir well to combine and allow the heat to melt the chocolate chips. If needed, microwave for another 30 seconds or so, until the chocolate is completely smooth.
3. Stir in the vanilla extract, dried cranberries, and salt, then quickly transfer the mixture to the lined pan and spread evenly.
4. Top the fudge with some sparkling sugar sprinkles, if youโ€™d like to include them, and press them down into the top of the fudge.
5. Let the fudge cool completely to room temperature before cutting into squares. You could also refrigerate it until itโ€™s cool.
6. Cut the fudge and store in an airtight container. Fudge can be stored at either room temperature or in the fridge.

If nut allergies aren't a concern, you could also add 1 c. toasted walnuts or pecans, or even candied orange peel (super simple to make!).

We know that whether the weather cooperates or not, your little ghouls and goblins are likely going to be processing a lot of sweet treats in the next four days! if you want to get something a little healthier in their tummies before heading out to parties, trunk-or-treat events, or just good old-fashioned trick-or-treating, get everyone together to make these Meatball Mummies!

You just need an 8oz can of crescent roll or crescent sheet dough and about 20 thawed, pre-cooked turkey meatballs (or your favorite option), and mustard & ketchup. That's it!

Preheat over to 375ยฐF

Have an adult line the work surface with cooking parchment paper. and then unroll the dough. If you're using crescent roll dough, press perforations to seal. Cut into 4 rectangles. Then with a knife or pizza cutter, cut each rectangle lengthwise into 10 pieces, making a total of 40 pieces of dough.

Then everyone can make mummies! Wrap 2 strips around each meatball, stretching the dough slightly as needed to cover the meatball like mummy bandages.

Spread the strips on one side to make a small space for the face.

Place them on an ungreased cookie sheet and bake 13-17 minutes until the dough is golden brown and the meatballs are hot.

While they bake, take two sealable sandwich baggies and put a couple of tablespoons of mustard in one, and a couple of tablespoons of ketchup in the other. Carefully snip the tip of one corner of each baggie to make a tiny piping opening, about the size of the tip of a ballpoint pen.

When the mummies come out of the oven, let them cool for a couple of minutes, and then dot each mummy's face with mustard and then ketchup in the middle of the mustard dot.

Serve immediately with some marinara or pizza sauce on the side for dipping! Make it a meal with a side salad and then your boo crew is ready to boo-gie!

Need a quick & easy (and healthy!) recipe for a busy weekday dinner? Check out these 5-ingredient Black Bean Quesadillas from EatingWell!
