Hope everyone is having a great year so far! I’m sure many of you have new year’s resolutions you want to achieve ✨. Last year I sought out to travel more and to explore different kinds of local dishes. I recall having such a great time in Annecy, where we can get amazing food anywhere we went 😋. Whether it was at a nice restaurant, at a farmers market, or even one of the hotels where we stayed at.

Here are some photos from one of the hotels, starting off with tartare de boeuf, pave de filet de boeuf, and finished off with delicate panna cotta. Everything was delicious! 🤩

I know we want to explore other cultural foods this year, and looking forward to bringing you with me during our travels! Where should we go next? 🌎🌍🌏

The beauty in spontaneity!

I just wanted to share our recent visit to a lovely Mexican restaurant in the city called Añejo Tribeca. We had just visited our friend’s art gallery and wanted to grab a bite to eat. We weren’t familiar with the area but this restaurant was literally right across the street. We said, “let’s just eat here” and it turned out to be such an amazing experience!

The atmosphere, tall ceiling, holiday decor, service and wait staff, and of course the food 😍. Luckily for us, we made it there during happy hour so we were able to enjoy a variety of dishes, including the ones you see in the photos. We had several rounds of pork tacos, Al Pastor chicken tostadas, Carnitas fries, and nachos that were topped with short rib! Everything was cooked to perfection, full of flavor, and kept wanting us to order more until our bellies were full! This is the kind of experience I strive for with Authentic Eats By Oleg. It’s the need to come back for seconds 😊

This experience was also a reminder that not everything needs to be planned because you can find the beauty in the unexpected. We have a good understanding of what foods we enjoy, but you’ll never know what the establishment is like until you truly experience it yourself. This place was a 10 out of 10 for us and we’ll definitely be coming back!

Hope everyone had a great Thanksgiving!

With more holiday celebrations around the corner, I’m reminded of all the delicious food that I’ll be creating and the dishes I’ve been inspired by during my travels.

Some inspirations from my recent trip to Annecy, France include these two dishes (be sure to swipe!). I had the chance to try fresh goat’s cheese with flower honey and grated summer truffles as a starter and end with the perfect crème brûlée, some beautiful finds just at a local bistro! These simple yet exquisite dishes reminded me of how food can create unforgettable moments—just as we hope to do with loved ones during the holidays.

Whether you’re enjoying festive classics or trying something new, may your season be filled with joy and flavor! More inspo from my trip to come 🙌🏼

This Saturday get ready for Copake Hillsdale Farmers Market! Excited to bring back Oleg’s Vegetarian Plov 🤩. If this is your first time having it, it’s a rice pilaf with different spices and aromatics. It’s sweet, it’s savory, it’s new for your taste buds for sure! At Le Bistro Du Rhone in Annecy, France, we indulged in beautifully crafted dishes. For our main dishes, we had a delicate poached octopus, perfectly tender, paired with handmade gnocchi à la provençale, bursting with Mediterranean flavors 🤤. The dish was elevated with a vibrant mix of baby vegetables. We also had the Spanish black pork which was so tender! It was served with a velvety carrot purée and seasonal vegetables, and finished with an aromatic truffle juice and a subtle kick from the Sichuan pepper condiment 🔥. Are you ready for another amazing weekend at the Copake Hillsdale Farmers Market? 😊🥳

We’re back from our Europe trip and I cannot wait to start cooking again for all of you again! Join us for another round of delicious, authentic Ukrainian and Eastern European food at your favorite farmers market this Saturday, October 12th from 9AM-1PM. Start off with some home-made Ukrainian potato pierogies with sour cream along with the specialty meat dumplings. To balance out the savioriness, try one of the sweeter options such as our cheese ricotta blintz with sour cherry preserve or the delicate Ukrainian Honey Cake! We have options to satisfy your cravings as you make your way around the market.

We are currently ending a trip in Europe, but we couldn’t leave without visiting some local farmers markets! The vendors are so friendly, and by the time I reached the end of the market, I was completely full from all the amazing free samples they were giving out! What a treat to try some of the freshest ingredients and beautiful creations these vendors have to offer 🙌🏼

I can’t wait to use these experiences and ingredients in my future creations for upcoming farmers markets and events. Always learning! 🔥

My cooking class at @hgshomechef ! Here I’m teaching two ways of how to prepare a Georgian Eggplant Roll. You either spread the creamy walnut garlic onion paste throughout the entire eggplant or leave it on side before you roll it. It depends on you on how you want to present it! You just want to be extra careful when rolling the eggplant since it can be quite delicate. Comment below on what you’d like me to teach in the next class!
