Happy Friday, Friends! It's been a minute, huh . . .

We've officially wrapped up for the year, after our earlier breakfast delivery to ServPro.

Breakfast Casserole, Biscuits & Gravy, Egg Bites and a muffin assortment - lots of good smells going on over here before dawn!

Tim & Kaity pretty much handled everything the last few weeks but I did hobble out to the kitchen to make the gravy this morning (one of my few claims to fame 😉)

We're going to do some family baking over the weekend and then we'll be off until February.

Tim just announced it's nap time - 4:15 alarm this morning 🥱. Y'all have a good weekend!

Gobble Gobble, Foodie Friends!

We just wrapped up our Thanksgiving catering; I don't think we've had a busy spurt for this holiday before 🤔and based on my 'hobble hobble', it's good that we're done!

Knee surgery for me on Friday; and yes, I will be asking about their Black Friday Sale!

For the next few weeks please reach out via email instead of text, calls & messenger - I'll be passing the buck, so Tim or Kaity will get back with you.

Y'all ever had one of those weeks when you can't even remember what day it is? We get that way sometimes around the bigger events but last week we just did LUNCH 🙃

Technically, it was lunch three days in a row and we had the same menu, but it was still CRAZY 🤪 We ended up having to call Georgia over to pitch in!

How did it get that way, you ask?

We had a scheduled lunch delivery for Wednesday, decided to offer Box Lunches on Thursday, then picked up a last minute lunch for Friday . . . and just, WOW ‼️

Our menu was all about comfort food, because why not ?!?

Beef Roast & Gravy with Mashed Potatoes, Chicken Dumplings Green Beans and Skillet Corn. We did do a different dessert each day - Mini Pumpkin Cakes, Yellow Sheetcake w/the best Chocolate Fudge Frosting and fall decorated White Wedding Mini Cakes.

Pics of the roast and dumplings don't look as good as they tasted, but one of us managed to get a lovely pic of the corn (and yes, corn can be lovely 😋)

As we were scrambling around with box lunches - 77 of them - I somehow cut the PERFECT piece of yellow cake. Kaity was thrilled when I started screaming "get a picture" 🙄

Thanksgiving preps start tomorrow with a big bulk shopping trip, then Tim's getting his turkey groove on smoking & frying some birds, plus he's doing a bunch of turkey legs for the first time 🍗

When it's Day 14 of 14 straight and wifey needs buttercream at 8:00 am.

Did you know I've called Tim Riley "Betty" for years? My Mom started it when she asked me to make something outrageous for a holiday and I emphatically declined. Her response was "Well just have Betty Crocker do it, he's not afraid" . . . and here we are.

"Baby, it's cold outside" is not what I was ready for this morning 🥶 and yes, I watched the weather but my mind refused to believe it!

The 3rd Veteran's Gala was a wonderful evening with a Loaded Baked Potato Bar for 260 fine folks supporting One Community - Veteran Restorative Housing, Eagles Court project. We were honored to be included again this year!

And we were HUSTLING . . . Potatoes came in hot, were unwrapped, moved to steam tables to keep warm, sliced open & buttered then set out for guests to pick up . . . I think it took us less than 40 minutes to get everybody through the line - that's HUSTLING 💯

BIG SHOUTOUT to our team for tackling something new like pros! And to Boys & Girls Clubs of Harrison-Crawford Counties for their support.

Loaded? Of course. We included pulled pork, smoked chicken, homemade chili, broccoli, nacho & shredded cheeses, green onions, jalapeños, bacon and 3 sauces (bbq, buffalo, ranch) along with sour cream packets to top it ALL off 😋

Green Beans, Garden Salad, Rolls, and Mini Desserts rounded out the meal.

This is our last biggie of the year, and this has been our biggest year for biggies . . . Up next is several smaller events, holiday parties and getting back to Box Lunches for our regulars.

Happy Friday Friends!

We're heading in to setup for the Veteran's Gala tomorrow then it's back home for prep, prep and more prep . . . I'll try to remember to get pics because we're doing something new and I'm excited to see it come together.

There is also a Veteran's Parade in Cordon tomorrow. Y'all love a parade, right? If you've got no plans, they'd love to have a big crowd!

BIG NEWS - it's not necessarily a new thing, we've kinda been doing it already, BUT now we're officially opening it up to YOU!

Timbec2customcatering will be offering an A La Carte menu for the upcoming holidays. This will include some of our most popular sides and desserts. We'll also be putting together bakery trays - we had several requests for these last year but couldn't get it in the schedule.

Sundays are not usually "Fundays" for us - it's unloading, dishes, clean up and resetting the kitchen. Luckily it's at our own pace and that's SLOW these days 🧓👵

Now that that's all done, I thought I should get a post in before y'all give up on me. Tim's already moved outside and has his orange string, laying out a little addition to the smoker area.

Wanna smoke? Gotta have room and some semblance of shelter if you're smoking year round and we're smoking again next week . . . And we're old. Old people get cold, hence the shelter 😉

Yesterday was our last wedding for this year. We were at Merry Ledges again, this time with a full Taco Bar and Nacho Bar. And you know what goes well with cool, crisp weather? Queso! We went thru every smidgen of our 200 servings of queso 😮

Did we get pics? Absolutely not. The food was lovely though and the place was decorated absolutely beautifully!

I did snag a pic of the salsa after we made it just because I thought it was pretty 😍 AND I have a couple pics from the nibblies we dropped off for our Friends at Glasstoberfest. Yay me 🥳

Early prep for the Veteran's Gala starts this week and we're already into holiday party planning . . . Time sure flies ⏰️

Good Morning, Friends! We've returned back to real life after a wonderful week of rest & relaxation! And we didn't cook a single thing 🙌
Tim made coffee but that's simply a survival tactic since Bec w/o coffee is
not pleasant (can you believe that!?!?)

We jumped right back into it with the lunch for our friends at HCPL. They've had us the last four years and kept the same menu so we must be doing something right! Of course, it includes Tim's brisket and our cornbread salad so it's automatically a winner 😉

Kaity Riley put together a top notch vegan menu for them yesterday too😮 They have several with specific dietary needs and she covered them all AND received tons of compliments for her efforts!

We also had the pleasure of taking dinner to our Dinner for Two winners from our giveaways back in February. We had a nice visit with Sarah & Chris and so appreciate their support!

Pics include food (finally!), some setups and how about some dessert since I saw today is like National Dessert Day (who knew, but yay!)

Y'all have a good week - it's supposed to be lovely!
