"Baby, it's cold outside" is not what I was ready for this morning 🥶 and yes, I watched the weather but my mind refused to believe it!

The 3rd Veteran's Gala was a wonderful evening with a Loaded Baked Potato Bar for 260 fine folks supporting One Community - Veteran Restorative Housing, Eagles Court project. We were honored to be included again this year!

And we were HUSTLING . . . Potatoes came in hot, were unwrapped, moved to steam tables to keep warm, sliced open & buttered then set out for guests to pick up . . . I think it took us less than 40 minutes to get everybody through the line - that's HUSTLING 💯

BIG SHOUTOUT to our team for tackling something new like pros! And to Boys & Girls Clubs of Harrison-Crawford Counties for their support.

Loaded? Of course. We included pulled pork, smoked chicken, homemade chili, broccoli, nacho & shredded cheeses, green onions, jalapeños, bacon and 3 sauces (bbq, buffalo, ranch) along with sour cream packets to top it ALL off 😋

Green Beans, Garden Salad, Rolls, and Mini Desserts rounded out the meal.

This is our last biggie of the year, and this has been our biggest year for biggies . . . Up next is several smaller events, holiday parties and getting back to Box Lunches for our regulars.

Happy Friday Friends!

We're heading in to setup for the Veteran's Gala tomorrow then it's back home for prep, prep and more prep . . . I'll try to remember to get pics because we're doing something new and I'm excited to see it come together.

There is also a Veteran's Parade in Cordon tomorrow. Y'all love a parade, right? If you've got no plans, they'd love to have a big crowd!

BIG NEWS - it's not necessarily a new thing, we've kinda been doing it already, BUT now we're officially opening it up to YOU!

Timbec2customcatering will be offering an A La Carte menu for the upcoming holidays. This will include some of our most popular sides and desserts. We'll also be putting together bakery trays - we had several requests for these last year but couldn't get it in the schedule.

Sundays are not usually "Fundays" for us - it's unloading, dishes, clean up and resetting the kitchen. Luckily it's at our own pace and that's SLOW these days 🧓👵

Now that that's all done, I thought I should get a post in before y'all give up on me. Tim's already moved outside and has his orange string, laying out a little addition to the smoker area.

Wanna smoke? Gotta have room and some semblance of shelter if you're smoking year round and we're smoking again next week . . . And we're old. Old people get cold, hence the shelter 😉

Yesterday was our last wedding for this year. We were at Merry Ledges again, this time with a full Taco Bar and Nacho Bar. And you know what goes well with cool, crisp weather? Queso! We went thru every smidgen of our 200 servings of queso 😮

Did we get pics? Absolutely not. The food was lovely though and the place was decorated absolutely beautifully!

I did snag a pic of the salsa after we made it just because I thought it was pretty 😍 AND I have a couple pics from the nibblies we dropped off for our Friends at Glasstoberfest. Yay me 🥳

Early prep for the Veteran's Gala starts this week and we're already into holiday party planning . . . Time sure flies ⏰️

Good Morning, Friends! We've returned back to real life after a wonderful week of rest & relaxation! And we didn't cook a single thing 🙌
Tim made coffee but that's simply a survival tactic since Bec w/o coffee is
not pleasant (can you believe that!?!?)

We jumped right back into it with the lunch for our friends at HCPL. They've had us the last four years and kept the same menu so we must be doing something right! Of course, it includes Tim's brisket and our cornbread salad so it's automatically a winner 😉

Kaity Riley put together a top notch vegan menu for them yesterday too😮 They have several with specific dietary needs and she covered them all AND received tons of compliments for her efforts!

We also had the pleasure of taking dinner to our Dinner for Two winners from our giveaways back in February. We had a nice visit with Sarah & Chris and so appreciate their support!

Pics include food (finally!), some setups and how about some dessert since I saw today is like National Dessert Day (who knew, but yay!)

Even a little catering business takes a village and we've got a great group!
These ladies keep things moving smoothly and we couldn't do it without them 😊

Things tend to be fast paced anyway but back to back weddings the last three weekends, at three different venues with three different menus and three different setups is a LOT and nothing phases them 😮

Big SHOUT OUT to our #2 Kaity Riley and crew - Emily, Jaylee, Norma, Aniston & Georgia 👏👏👏👏👏👏

PS - Kaity will hate this picture but this is a look & stance we're all so familiar with . . . The questioning look is usually directed towards Tim or I, with a "what the . . . " 🤣

Gosh Y'all, August slid into October so quickly I'd think we completely missed September!

We've had 18 events since Aug 3, including four weddings, two 200+ annual get togethers and a bunch of random birthday parties, lunches & dinners . . . Thanks to everyone that gave us the opportunity to serve you!

I've got a growing collection of pictures I need to share but that'll have to wait . . . After clean up today, we're heading out for an actual vacation 🙌 😎

Good Morning a little late - I was so enjoying the rain from the front porch, I got a tad bit distracted 🤭

I think we've finally got everything washed & put away from Saturday's wedding . . . It takes a lot of stuff to feed over 200. I'm always glad we have stuff but it's a constant struggle finding room for all of it 🤪

We're always tweaking how we set up, what we can use that's more efficient and how it all plays out with our presentation. We did THREE separate appetizer tables on Saturday - that's three of everything we used. And yes, it has to match - plenty of eye rolls as I was insisting on this 🙄

Our menu this weekend featured ALL the comfort foods - including Hash Brown Casserole, Buffalo Chicken Dip, and Meatballs for the masses (OG style - grape jelly & chili sauce 😋).

One new challenge was some kind of topped cornbread with a little kicky- kick to it 🤔 We ended up with a mini jalapeño corn muffin, topped with a candied jalapeño and a honey butter glaze 😮 All the reviews were positive so YAY US!

Kaity tackled the big challenge of a lemonade that matched the bride's
favorite pink petunias . . . Y'all, we done drank A BUNCH of lemonade in the last couple months! A big kudos to our extended tasters and how 'bout a round of applause because it was PERFECT 💕💕💕

As always, so few pictures . . . but I did get a lil' video of the magic lemonade ✨️ The whole event was actually magical with huge tents, millions of garden flowers, a sweet dance floor and we had a blast 🥳

Lunch tomorrow for our friends at South Central then Fall Wedding #2 on Saturday.

What's up y'all, besides another fabulous fall like morning !?! 🌄

Couple of smaller things this week, plus we managed to get in a lovely little camping trip to Sycamore Springs😌 See included pic of Tim Riley doing what he loves - cooking over the fire 🔥 Lucky me!

On Thursday, we contributed a whole bunch of green beans and pasta salad to our friends at ServPro for lunch at their charity golf scramble at the beautiful Champions Pointe.

Friday we did lunch for a group that was meeting at O'Bannon Woods. Boy was it a hearty meal with Tim's roast beef & gravy, glazed ham, those good baby roasted potatoes and our skillet corn . . . Yum. Yum. Finished it off with a peach cobbler 😋 and an iced texas brownie with salted caramel 😋

I hope you're mouth is watering - mine is 😉

Fall weddings start next weekend and
we're kicking it off with a 200+ biggie 🔔💑 Prep this weekend includes the dreaded clean out/reorganize of the storage bldg and trailer. An organized Bec is for the good of all ✌️

Fun times last night helping out our friends at the Boys & Girls Club for their annual Gala 🎊 We saw quite a few people we knew, some old friends (like from Kindergarten!) and met lots of nice folks!

They prepared a fabulous Prime Rib Dinner and the whole place was decorated with an Old Hollywood Glam vibe ✨️ Their staff is top notch too . . .

We contributed dessert and I think the Mini Cheesecakes were a hit! Of course we coordinated our sweet little containers with the theme - I even convinced Kaity to use GOLD labels! Could you read them? Barely. Were they cute? Absolutely 😉
