First paella for a business event in Germany. I don’t do it often but in this case the order came from a VIP Customer: my lovely wife!!! Paella BIlbao Style am Rhein for 100 people. Yes, I used chorizo since it was Bilbao Style. Paella was returned with no single grain left.

It’s probably the last paella I cook in Saint Louis before we move to Germany. “Paella Bilbao” for a Block Party to farewell two couples leaving, celebrate several baby additions and to continue a tradition rooted in 4700 Westminster Pl Block’s DNA!! We have enjoyed these last 9 years in the best neighborhood you could ever live in. We were welcomed in 2011 with notes, cookies, wine & champagne and we leave with many new friends. Thank you neighbors for all the good memories we take with us.

The Croquetterie was closed in December due to family reasons. Our heiress Ona was born in June. However, we have still been active helping people during the isolation at home with some cooking classes.

This weekend should have been celebrated the Festival of Nations that we have attended six times as the Spanish Food Booth. But as you know it was cancelled due to Covid-19 although the International Institute’s Amazing Team has created the Virtual Taste of Nations and they used one my last year’s paella cooking class as the Cover photo in the website.

But there is more, I have been invited to teach some Spanish recipes live on Zoom this coming Sunday at 1pm (CST).

Do you want to learn how to cook Gazpacho and Salmorejo? Join me for 1 hour and enjoy one of the most refreshing Spanish foods for the hottest Summer days.

As I mentioned in one of my last posts, I wanted to share with you more global foods with local ingredients:
1. intentionally leftover sourdough
2. Garlic
3. Local Brats
4. Local Bacon
5. chorizo
6. Green, yellow, red and orange peppers

What could be cooked with all these ingredients? MIGAS that translated into English would mean Breadcrumbs but it’s more than that.

Steps for your own migas:

1. Soak in water with a pinch of salt a sourdough intentional left over.

2. Fry some unpeeled garlic cloves in a pan or better a wok. Once golden remove them from the pan but keep the garlic oil in the pan.

3. Stir the slightly wet sourdough in small pieces until golden and dry.

4. Fry separately bacon, chorizo, sausage... everything pork and remove the extra fat.

5. Fry in a different pan some peppers.

Here is where my mother in law’s recipe and mine would differ: she would mix every separate ingredient in her plate or mine: I would mix everything on the pan and serve it mixed.

Both ways would work so do whatever you like!!!!
