Bacon Ribs are back by popular demand! Join the craze over these massive ribs--cured like bacon & smoked like ribs, they became an instant favorite to everyone who tried them.

Wagyu Beef Short Ribs are also making their debut & we have a full BBQ lineup of Brisket, Tri Tip, Pulled Pork, & Sausages! We have fresh sourdough from the The Geekery Bakery--the perfect partner to smokey BBQ.

SOLD OUT!!! We are all sold out and closing early to get stuff on the smokers for tomorrow. THANK YOU!!!

UPDATE--On our way to Cedar Draw one of the pipes under our trailer came off so we had to get that taken care of. We should be ready to serve by 530 though!

First day serving WAGYU!!! Everything has been on the smoker since morning & we'll be ready to start serving at Cedar Draw Cider at 5 this evening. Come enjoy the nice weather with us and have a cider!

Tomorrow marks Day 1 of our 4 Day stay at Cedar Draw Cider, and we're bringing something new and special each day!

It's been a long time in the works, but it all fell into place this week when we weren't expecting it--We're excited to announce some WAGYU dishes will finally be showing up on our menu, thanks to our new partnership with Brasil Beef Ranch in Shoshone! Their focus on raising animals humanely and with attention to detail to produce top quality beef is the exact kind of local partner that we try to work with, and we're excited to bring new meat options to you!

Tomorrow's menu will feature Wagyu Beef Shank over mashed potatoes, gravy, & sourdough from The Geekery Bakery. We'll also have SMOKED MEATLOAF back for one night only--it sold out fast last time so come see what all the hype was about!

Brand New SPECIAL we've never done in the truck before--Smoked Brisket Stew. Loaded with smoked brisket & veggies & served with fresh sourdough from The Geekery Bakery, this healthy & hearty stew will keep you warm and full all day!

We have some equipment down so our menu is a little limited, but we have the essentials like Pitmaster Mac & Cheeses, Burgers, Nachos, & Cheesesteaks!

We'll serve until sold out!

Worth the wait! The Bacon Rib has SO much flavor and the Flat Iron is tender and super Beefy. Come grab yours while you can at the Twin Falls Food Truck Square, serving until 230 (unless we sell out of this batch sooner) and then we're headed to Cedar Draw Cider in Buhl for round 2 at 5.

It's been a much more hands on night of smoking these ribs and flat irons than expected, so we're going to skip breakfast and serve lunch at the Twin Falls Food Truck Square 1130 - 230

Tomorrow we're going back to our roots and focusing on traditional barbecue! We've been wanting to do 2 new meats for quite a while, and Meat and Potato Co. came through BIG with sourcing these cuts locally and at very high quality.

Flat Iron: coming from the 2nd most tender muscle group on the cow, these steaks are a little hard to reach & a hassle to cut & trim. Each roast is cut in half lengthwise to avoid a big piece of seam-fat, resulting in flat steaks. We're leaving the entire Flat Iron together & smoking it for a really long time, just like a brisket, to render it all down and have a super flavorful & tender piece of meat.

Bacon Rib: normally the Spareribs are separated from the belly (where bacon comes from). Falls Brand left the ribs & belly connected for us to create an XL pork rib. Cured like bacon & smoked like ribs, these are the best of both worlds!

Credits to Leroy & Lewis--one of the first ever BBQ joints to be awarded a Michelin Star, located in Austin, TX! We learned the Flat Iron & Bacon Rib methods from them and then tweaked the process a little to make it our own.
