Eggplant and Potato Salad ❤️
Ingredients 😍
- 2 cups of potatoes, cut into medium-sized cubes.
- Sumac.
- 1/4 cup of mayonnaise.
- Chopped pepper (as desired).
- 1/4 cup of tahini.
- 2 cups of eggplant (peeled and cut into cubes).
- 4 cloves of minced garlic.
- 1/4 cup of finely chopped parsley.
- Lemon juice (as desired).
- Toasted bread.
Instructions 😍
- In a bowl, put the eggplant and sprinkle it with a little salt, then fry it until it turns golden brown (making sure to completely dry it from the oil).
- Fry the potatoes until they turn golden brown (making sure to completely dry them from the oil).
- Sprinkle the potatoes and eggplant with sumac and mix, then prepare the sauce by mixing (tahini + lemon + mayonnaise + yogurt) and stir well until the sauce is mixed, then add the garlic and pepper.
- Put the eggplant and potatoes in a serving dish and pour the sauce over them in a random manner, and add toasted bread on top and decorate with parsley.
- Decorate the eggplant and potato salad with fried pine nuts and fried bread and serve.

سلطة الباذنجان والبطاطس❤️
المكونات 😍
- 2 كوب بطاطس مقطعة إلى مكعبات متوسطة الحجم .
- سماق .
-ربع كوب من المايونيز .
- فلفل مفروم (حسب الرغبة ).
- ربع كوب من الطحينية .
- 2 كوب من الباذنجان (مقشر ومقطع إلى مكعبات ).
- 4 فصوص ثوم مهروسة .
- بقدونس مفروم ناعم مقدار ربع كوب.
- عصير ليمون (حسب الرغبة ).
خبز محمص
الطريقة 😍

في وعاء نضع الباذنجان و نرشه بالقليل من الملح ونتركه قليلا ثم نقليه حتى يتحمر (مع التأكد من تنشيفه تماما من الزيت ).
- نقلي البطاطس حتى تتحمر (مع التأكد من تنشيفها تماما من الزيت ).
- نرش البطاطس والباذنجان بالسماق ونخلط ثم نجهز الصوص عن طريق خلط (الطحينية +الليمون ++المايونيز +اللبن )ونحرك جيدا حتى يمتزج الصوص ثم نضيف الثوم والفلفل.

نضع الباذنجان والبطاطا في طبق التقديم ونسكب الصوص فوقهما بشكل عشوائي ونضيف على الوجة خبز محمص ويزين بالبقدونس.
